Amber Joins Young Master Releasing Food-Pairing Eco-Ale

The two-Michelin-starred fine dining tenet, Amber, located in The Landmark Mandarin Oriental, has partnered with Hong Kong’s beloved brewery Young Master to create its first ever wild ale, inviting Hong Kongers far and wide to “brew it up”!
The Amber Dark Toast Wild Ale is made with up-cycled sourdough, cementing their advocacy for sustainable practices in the food and beverage industry without compromising taste.
Amber’s tangy sourdough bread and Young Master’s artisan-cultured wild yeast come together to create a Lambic-style beer from Belgium, a taste achieved by fermenting and aging in an oak foeder with a medley of wild yeast and bacteria strains.
This full-bodied ale has a unique toastiness reminiscent of Japanese Hojicha, coupled with sweet notes of caramel, toffee, and dark fruit; making it the perfect accompaniment to any dish or snack.
“It is always exciting to work with innovative, trend-setting local brands to create something bold,” said Director of Culinary Operations and Food and Beverages, chef Richard Ekkebus. “Sustainability is an important part of our manifesto at Amber, and personally to me.”
“One of our main focuses at the hotel is to reduce our waste, and we have reduced our waste by over 25% in the past years and in 2022 we are reaching 38%.”
With a limited number of bottles produced, 360 units of Amber Dark Toast Wild Ale (750ml) is at an environmentally and labour-conscious price of HK$298, with pre-order available at The Landmark Mandarin Oriental, Hong Kong, and Young Master’s online stores from Dec. 19 onward.
