Todd Darling is a long-time Hong Konger. However, the part-New Jerseyite part-New Yorker screams East Coast on first meet. Arriving to the city two decades ago, Todd isn’t homesick living in Hong Kong with his family, but proud of his heritage growing up in trattorias and Italian diners.

15 years ago, Todd founded Red Sauce Hospitality, the restaurant group in Hong Kong opening eateries that celebrate Italiano fare. Their concepts include the city’s most favourable New York-inspired and –infused spaces Frank’s Italian American Social Club, Frank’s Records, Fini’s, and the late Posto Pubblico.

Charting a definitive period in Hong Kong’s F&B space, the city has a real unique taste of its sister city with tangy, spicy red sauce pizza, pasta, and antipasti dishes. We picked Todd’s brains on The Delish Guestlist Podcast to listen to his story of linking two great cities together with sauce.
