Hong Kong’s first and only dedicated beer shop, Craftissimo, has cured a cult clique in its nine years of infancy born on the streets of Hong Kong, now existing as a metaphorical light in Tai Ping Shan to its moth-like lovers who flock to the shop daily from 1 to 11 PM for a refuel of more than 280 types of beers, ciders, and natural wines.

Recently opening a second store on the hip Haven Street in Causeway Bay, the local craft beer brand is set to alight the city with a favour and passion for craft beers in all its corners.

The Beat Asia sat down with general manager Timo Calder to quiz the man behind the operations about his daily musings with Craftissimo, expansion of the leading craft beer store, what craft beer means to him and Hong Kong, and the brand’s future.

Tell me a bit about yourself, Timo. What has your professional career looked like in the U.S. and Asia? What drew you to Hong Kong?

“I grew up in Brooklyn, New York. I have lived in Asia since I graduated from college in the U.S. in 2010. After graduating, I did a fellowship called Princeton in Asia which sent me to teach history at secondary school in Singapore for more than two years.”

“So since then, I’ve focused on education in my career. I lived in Beijing for six years as well before moving to Hong Kong in 2019. I visited Hong Kong probably 20 times in the past decade, so it was a place I knew well, and I always thought of it as the perfect place to end up. The usual things drew me to Hong Kong — global hub, nightlife, beaches, hiking, food, etc., but I didn’t know at the time that it was also a hub for craft beer.”

Have you always had a special relationship with craft beer? What do you like about craft beer?

“I was lucky enough to be exposed to craft beer from early in my experience with beer. Growing up I had a friend who was this perfect combination of anti-mainstream and nerdy researcher. While some of my friends were drinking Bud Light and Olde English, he was drinking Dead Guy, Arrogant Bastard, and Sierra Nevada. Growing up in Brooklyn, I’ve always had a fondness for Brooklyn Lager, and they are very well established in Asia, so I’ve always been able to find them.”

“I love craft beer because it starts with a strong DIY, homebrew foundation, which when you scale up leads to a lot of creativity and experimentation. Beer doesn’t have the constraints of tradition like wine, so we have seen breakneck innovation.”

What made you take over at Craftissimo?

“My friends and I started as consistent customers. It was a place that we loved to hang out because of the chill al fresco vibes and beer selection you couldn’t find anywhere else.”

“At one point we heard from Ronnie, the founder, was getting married, leaving HK, and was looking to do something else. As a friend group, we made a pretty quick decision to make an offer to take it over and go in together as co-owners.”

When you started, was there a need to introduce international craft beers to Hong Kong? What do you think of the craft beer scene in the city? What improvements can be made?

“We have many different kinds of customers: we have the beer geeks who want to see something new, fresh, international, and difficult to find every week; we have the regulars who just want to explore and try something different and exciting every visit; we have the lager drinkers who just want something low priced, easy to drink, nostalgic; and we have the non-beer drinkers who are looking for a cocktail or wine or might be convinced to try a beer.”

"We see ourselves as serving all these equally important demographics. We see ourselves as educators and we want to welcome people into the space. The biggest problem that craft beer has is that it can be esoteric and intimidating, and it seriously lacks diversity. We want to fight against that and bring people into fold in every interaction we have.”

What success have you seen with Craftissimo?

“Obviously, the past year or so since we took over has not been easy in Hong Kong. We are lucky because we are retail so we haven’t been hit as hard as many other businesses who had to fully shut their doors.”

“But we have seen a lot of regulars ship out and we think that people are just drinking less in general, staying home, and saving money. That all being said, we are very excited for the future in HK. The city will bounce back as it always does, more people will come back to HK and we look forward to many fun times ahead.”

What does the future look like for Craftissimo in Tai Ping Shan? Causeway Bay? Other chain stores?

“We recently opened our second location called Craft Haven on Haven Street in Causeway Bay and our goal is to continue growing. We look to local examples like Dough Bros and Feather and Bone.”

“We are aiming to be the craft beer equivalent. We have such an amazing and loyal following and we want to continue to build that community. We will make sure Craft Haven is established first but then we will look to more up and coming locations like Quarry Bay or Sham Shui Po.”

There are lunches, and then there are lunches worth surrendering an entire afternoon to. This upcoming festive season, Jean-Pierre invites diners to embrace the latter with the Trois Martini Lunch, the restaurant's first-ever daytime service since opening in 2025.

Available every Thursday and Friday for HK$588 per guest from Oct. 15 to Dec. 26, 2026, the lunch showcases the kind of generous, deeply comforting French cooking that has made the SoHo bistro a favorite among those in search of classic Parisian charm.

Starters range from Escargots de Bourgogne and Steak Tartare to Soupe à l'Oignon and Salade de Chèvre Chaud, followed by a choice of bistro mainstays including Boeuf Bourguignon, Saumon au Beurre Blanc, Gnocchi Parisienne, and Steak au Poivre.

For tables of two or more, the centerpiece is the Poulet de Simone, Jean-Pierre's signature roast chicken filled with mushrooms, tarragon, and spinach, carved tableside and accompanied by Pierre Koffmann fries, roasted mushrooms, and crisp salad. To finish, guests can choose between a silky Mousse au Chocolat and a classic Profiteroles for dessert.

Of course, no Trois Martini Lunch would be complete without the martinis. For an additional HK$288 per guest, diners can enjoy three expertly made serves that encourage the meal to unfold at its own pace.

Reservations are available online via Sevenrooms, while more details can be found on Instagram at @jeanpierrehongkong and their website.

K11 MUSEA and Two Moons Serve Up a Gin-Fueled Dining Crawl

Taste of GI Ndulgence 1Photo by K11 Musea/Website

K11 MUSEA and K11 Art Mall have teamed up with Two Moons Distillery for "Taste of GIN-dulgence," a limited-time series of 12 food-and-gin pairings running from now through Nov. 30, 2026.

The program brings together 12 restaurants across the two K11 destinations, each serving a signature dish with a cocktail built around Two Moons gin. Gin is not treated as an afterthought or a side character; rather, each place brings a full flavor experience: citrus, tea, ginger, and floral botanical notes are used to sharpen, soften, or contrast with what is on the plate.

At UNAGI YONDAIME KIKUGAWA, for example, the Ippon Hitsumabushi Set is paired with "Moonlit," made with Ginger Gin, mirin, yuzu, honey, and soda. The bright drink is designed to cut through the rich, broiled eel. Yung's Bistro takes a similarly refreshing approach with "The Salisbury Jade," combining Calamansi Gin, Seedlip Garden 108, cucumber, sparkling oolong, lime, and watercress honey alongside deep-fried shrimp balls.

Other pairings lean richer or more playful. Glasshouse Greenery serves BBQ Peking Duck Pizza with "Dandy Butcher," a spirit-forward mix of Signature Dry Gin, Yuk Bing Siu, dry vermouth, red date, and chocolate bitters. At Hearth Yakiniku by ATUM, A5 Japanese Miyazaki Wagyu Chuck Rib comes with a Calamansi Gin cocktail featuring apple cider, black tea, and lemon juice to balance the indulgent Wagyu.

The lineup also includes Japanese, Cantonese, and contemporary dishes at restaurants such as KAIYŌ, Sushi Masa, Dab-Pa, Golden Blossoms, Greyhound Cafe Galleria, VELO, HOW To Live Well, and Shiawase Yakitori.

Beyond the restaurant pairings, K11 MUSEA is hosting two "Moonlit Sips" guest bartender takeovers.

KT Lam, Bar Director at Rosewood Bangkok, takes over Yung's Bistro on Oct. 9, 2026, from 5:30 to 8:30 PM. Lam oversees Lennon's, which is ranked No. 7 on Asia's 50 Best Bars 2026.

On Nov. 13, bartender Antonio Lai, Co-Founder of Quinary, Draft Land, and The Opposites, will helm UNAGI YONDAIME KIKUGAWA from 7 to 10 PM, pairing his cocktails with the restaurant's unagi.

There is also a perk for KLUB 11 members. From Oct. 12 to Nov. 30, 2026, members can access dining privileges at more than 30 selected restaurants across K11 MUSEA and K11 Art Mall, with up to HK$1,200 in dining discounts.

For updates, follow K11 MUSEA and Two Moons Distillery on Instagram. To know more about "Taste of GIN-dulgence," visit K11 MUSEA's official website.

Taking place on Oct. 6, 2026, the French Riviera-inspired evening features a multi-course set menu priced at HK$688 per person, with special wine pours also available. The lineup leans into the coastal flavors of Southern France.

Dinner starts with a spread of hors d'oeuvres designed for sharing, including Oregano Sourdough Fougasse with Ratatouille, Fried Zucchini Flowers with red pepper and goat cheese, Artichokes à la Barigoule, and Pissaladière.

From there, guests can get a bowl of Bouillabaisse with Rouille Toast, followed by Spaghetti tossed with prawns, bottarga, garlic, and olive oil.

Rosewood Hong Kong Teases New Bar Concept from the Team Behind Bar Leone

Rosewood Hong Kong Teases New Bar Concept from the Team Behind Bar Leone 1Photo by Rosewood Hong Kong | Companion Communications

Looking for your next go-to bar? Hong Kong’s cocktail scene is about to get a major shake-up, as Rosewood Hong Kong has recently revealed its plan to launch a new bar concept later this year. What makes this announcement exciting is that the upcoming bar will be developed exclusively for the hotel with the help of Lorenzo Antinori and Justin Shun Wah, the names behind Bar Leone, which was named The World’s 50 Best Bar in 2025 and maintains the Best Bar in Hong Kong 2026 title for the 3rd year in a row.

The project is slated to open in November 2026, bringing together two heavyweight names in luxury hospitality and cocktails. On one side is Rosewood Hong Kong, which topped The World’s 50 Best Hotels rankings in both 2025 and 2026. On the other is Bar Leone, the neighborhood bar that has quickly become one of the industry's biggest success stories.

For now, details about the venue remain under wraps. Rosewood has only described the concept as "an exciting new chapter for cocktail culture in Hong Kong," leaving cocktail enthusiasts to speculate about what the duo and the hotel has in store.

The hotel has already kicked off a teaser campaign on Instagram for those who want a glimpse of the upcoming project ahead of its official unveiling.

More information is expected to arrive in late October according to the post, so keep an eye on Rosewood Hong Kong's Instagram for sneak peeks and upcoming announcements.
