Duddells Now Catering Cathay Pacific First Class with Hong Kong Flavours

Cathay Pacific and Michelin-star Cantonese restaurant Duddell’s are joining efforts to bring a new “Hong Kong Flavours” concept menu to celebrate local recipes and favourites 30,000 feet up in the air.

The new promotional menus, offering both Cathay Pacific business and first-class flights, bring a fresh curated interpretation of much-loved Cantonese dim sum and plate specialties.

For First class customers, expect delicately designed appetisers chilled abalone and cucumber with black vinegar and minced pork with mixed vegetables and pomelo. Main courses include Iberico pork belly, wok fried lobster in white pepper sauce, and chrysanthemum and longan jelly for dessert.

Among special Business class offerings, customers can enjoy Chinese classics drunken prawns with aged Huadiao, and shredded chicken and jellyfish salad with sesame dressing, steamed halibut with cordyceps flowers and ginger milk, or strawberry yoghurt pudding for sweet endings.

Ella at The Trilogythe jazz live music venue named after the Queen of Jazz, Ella Fitzgerald, has launched a vibrant new cocktail menu: Louisiana Gold.

The brainchild of Singular Concepts’ Beverage Manager, Maikal Gurung, Louisiana Gold pays tribute to the spirit of New Orleans, where the sounds of Dixieland and the flavors of Creole culture and Southern tradition converge. 

Louisiana Gold features refreshing cocktails such as Bayou Breeze, made with 15-year-old rum, cucumber, and watermelon. Another highlight is Pistachio & Gold, a bourbon infused with pistachio, arnibal (Filipino caramel), lemon juice, and pineapple foam. 

Their signature cocktails, "Legends and Lore," offer fun twists on classics. The Classic Creole is a smoky, herb-infused margarita with charred corn, cilantro, and agave. The Delta Julep kicks up the Southern staple with peanut butter-washed vodka, cognac, and fresh strawberry.

For martini lovers, the Wet Crescent mixes gin, olive brine, and a hint of orange. And don’t miss the daily special — a smooth Clarified Bloody Mary with house hot sauce and Grey Goose. 

Beyond these signature drinks, guests can also enjoy timeless New Orleans favorites such as the Brandy Crusta, French 75, and Grasshopper — each one a delicious nod to the city’s deep-rooted cocktail culture.

Start with the Typhoon Shelter Tater Tots — crispy, addictive, and packed with garlic, shallots, fermented black bean, ginger, and chili.

Seafood lovers, meet your match with the NOLA Lobster Roll — butter-poached lobster on buttery brioche, or go hearty with Deep South Baked Potato Skins — loaded and indulgent.

Meanwhile, food truck-inspired tacos bring bold, Southern-kissed flavors. Choose from an array of smoky and satisfying options, such as Duck Tacos, Prawn Tacos, or char-grilled Cauliflower Tacos.

'Treasures of Home Kong Buffet' Makes A Return at Tung Chung Kitchen

Every classic Hong Kong delicacy deserves to have its story and charm shared with everyone. 

Tung Chung Kitchen’s “Treasures of Home Kong Buffet” will return for its second edition from June 30 to Sept. 28, 2025, elevating the dining experience and introducing more timeless local cuisine. 

Apart from the handmade siu mai from Chow Kee’s Sauces, Tung Chung Kitchen will be partnering with the four-decade-old Kwan Hong Bakery to incorporate their beloved fillings with house-made warm Mochi, recreating dining memories though this traditional treat and many more, continuing to promote the food culture of Hong Kong to both local and international guests. 

Highlights of the “Treasures of Home Kong Buffet Vol. 2” include the house-made Pork Knuckles and Ginger Stew, HK-style Lou Mei, Pork Offal Stew, Tofu Pudding in Wooden Bucket, and various ingredients for guests to create their own HK-style Egg Waffle

Another standout is the HK-style Bagged Noodles, which brings back fond childhood memories for many. Guests can choose their preferred ingredients and sauces by mixing them in a plastic bag and slurping with a skewer stick like in the good old days. 

One noteworthy item is the nostalgic and increasingly rare treat – Mochi served with flavourful sesame and peanut fillings from Kwan Hong Bakery, which truly evokes delightful memories. Street food lovers should not miss the ubiquitous Cheung Fun (Rice Noodle Rolls), drizzled with sweet soy sauce, hoi sin sauce, and sesame seeds, which is packed with authentic Hong Kong flavours and goes particularly well with siu mai.

Incorporating Hoegaarden’s popular Fruity Range of wheat beers as a base, these feature a masterful mix of premium gins and a variety of ingredients, each offering a smooth and complex flavor profile.

The masterminds and mixologists behind Draft Land HK, Antonio Lai and Angus Zou, are leading the charge. Firstly, they have whipped up Blushing Gaarden (with 11% ABV), which is like summer in a glass. Picture juicy peach vibes from Hoegaarden Peach beer blending with roasted oolong tea, fresh herbal gin, a drizzle of honey, and a zesty lemon twist.

What do cucumber peels, onion skins, and leftover pasta have in common? They’re the stars of Conscious Cooking – Asian Delights, the brand-new cookbook launched by HKU’s School of Biological Sciences in partnership with GREEN Hospitality and the award-winning food-saving app CHOMP!

With Asia producing 50% of the world’s food waste (and Hong Kong alone tossing 3,437 tons daily!), this initiative aims to reduce food waste and promote sustainable cooking.

This cookbook isn’t just eye-opening; it’s packed with mouthwatering recipes that turn "trash," such as lemon peels, leek tops, potato skins, and other leftovers, into "treasure."

Featuring twenty exclusive recipes from nine of Hong Kong’s leading local chefs and rising talents, all proceeds from the cookbook will go towards the Foodlink Foundation

Dive Into Southern Italy with Casa Sophia Loren's New Free-Flow Brunch

Casa Sophia Loren in Wan Chai has launched its new A’ Tavola Brunch, offering a fusion of flavors inspired by the sun-kissed regions of southern Italy.  

A’ Tavola Brunch features a generous selection of sharing appetizers from both land and sea, unlimited pasta dishes, a choice of main courses, and a sharing dessert platter.

Seafood and meats rub shoulders with fresh tomatoes, and always a hint of lemon. The restaurant has a classy vibe with plush blue and white seating framed by larger-than-life photos of Loren gazing down at diners.

We started our brunch with a refreshing mimosa, paper-thin slices of melt-in-the-mouth octopus, juicy pink tuna tartare, and freshly shucked French David Hervé Oysters. These oysters were the No.3 range — a smaller type known for their delicate texture and flavor.

The Beef Tartare was fresh, sweet, and pleasingly topped with a quail egg. The Fettuccine Lobster pasta was an indulgent treat, featuring a juicy tomato sauce and generous chunks of succulent lobster.

For mains, don’t miss the Cod fish, Mussel and Cherry Tomato, oven-baked in Carta Fata. This innovative dish uses a special cooking film to wrap the dish (sea bass, mussels, and herbs) in a sealed packet, allowing the food inside to gently steam, retaining all the nutrients and flavors.

Vegetarians can enjoy the tasty Eggplant Parmigiana, cooked in a classic tomato sauce and presented in a copper dish.

The dessert platter was a sumptuous spread of naughty but nice puddings. Italians will love the tangy Lemon Sorbet and Lemon Gelato — all round favorites, complemented by a mini carafe of limoncello — of course.

Casa Sophia Loren is the perfect spot for a leisurely lunch with friends or a special birthday treat. Priced at HK$588 per adult and HK$294 per kid (six to 12 years old), the menu offers a delightful array of decadent options. We can't wait to return for more of their refreshing lemon gelato!
