In the Intervals: Time, Travel, and Cocktails Collide at HKIA
The clock ticks differently when you're traveling, and nowhere is this more apparent than at Intervals, a novel concept launched by collaborators Mei Mei Song and Victoria Chow. Intent on crafting a new genre of airport hospitality, they set out to create a destination where time, cocktails, and travel collide.
Dropping anchor at the HKIA Skybridge, Intervals introduces a unique approach to the often monotonous routine of airport transits. Here, travel experiences are crafted around 'intervals', time-bound units that dictate the rhythm of a traveler's journey, from security checks to boarding calls.
The drink menu at Intervals is designed around these very intervals, offering guests a 'flight of cocktails' tailored to their time budget. Whether it's a swift 15-minute experience with two carefully curated drinks or an unhurried 45-minute exploration of six different cocktails, the choices cater to the constraints of travel. A non-alcoholic 'flight' ensures that those preferring an alcohol-free encounter are not left behind.
Food experiences at Intervals are equally mindful of travelers' schedules. Guests can select from an array of 'pinchos' – international variations of tapas-style snacks – that are rotated frequently. Even those hard-pressed for time can partake in the experience, with specially created takeaway boxes of cocktails and pinchos.
The ambiance at Intervals, crafted by Australian architect Mitchel Squires of AVT Studios, seamlessly accommodates various travel profiles. Traditional time-keeping devices are referenced in the design, while the Skybridge location affords unimpeded views of HKIA's runways. A taste of local Hong Kong is also folded into the experience, thanks to partnerships with homegrown brands like Plantation Tea, Loveramics, and Young Master Brewery.
Intervals is currently soft open daily between the hours of 11am - 8pm, and is set to redefine the norms of airport hospitality, bringing an innovative twist to the concept of travel time and setting a new pace in airport experiences.
