Wynn Palace Opens Conceptual Restaurant Chef Tam’s Seasons on Aug. 24

Drawing inspiration from the 24 solar terms of the traditional Chinese calendar, Wynn Palace unveiled Chef Tam’s Seasons, a conceptual restaurant capturing Cantonese gastronomy using global ingredients.
Open for booking starting Aug. 24, Chef Tam’s Seasons highlights Wynn's Cantonese master chef Tam Kwok Fung’s versatility in local cuisine through courses that pay homage to Chinese traditional wisdom of health and gastronomy. The reference to the 24 solar terms represents the micro-changes in regional climate that influence the availability of ingredients. Gourmets are served by seasonality, adapting to even the slightest changes like temperature and humidity.
"I have faith in seasonality and the pure flavours of ingredients. Through Chef Tam's Seasons I hope to reinvent and re-interpret the essence of Cantonese cuisine by introducing contemporary concepts, techniques, combined with playful creativity, in creating a new form of Cantonese cuisine that showcases the rich heritage of Cantonese cuisine with innovative flair," chef Tam said.
Guests can also enjoy tea pairing throughout the meal, as well as a selection of artisanal brews and tisanes at the tea lounge. The restaurant has a team of experienced sommeliers for sourcing Chinese baijiu, displayed on a custom-built Baijiu trolley.
A known figure in Cantonese cuisine, chef Tam is Macau's first recipient of the “Chef of the Year” honour at the Black Pearl Restaurant Guide in 2023. He is responsible for leading his restaurants to international accolades, such as Michelin stars and placement on Asia's 50 Best Restaurants.
