The menu begins with Tartare di gamberi ed alghe di lago- prawn tartare and lake weed, while mains include Castellana's classic Il filetto di Fassona- Fassona veal tenderloin paired with Chanterelle mushrooms and Parmesan cheese sauce, and the luxurious Astice blu Francese, funghi e tartufo bianco d’Alba- a Brittany blue lobster seafood dish with Alba white truffle. Don't sleep on the Risotto alla Gualtiero Marchesi- made with one-year-old Italian Carnaroli rice and saffron, garnished with edible gold.

Desserts include Zabaione e panettone natalizio- a traditional Italian festive panettone with whipped custard for a sweet finish.
