In a remarkable display of culinary mastery and fusing of international influences, LUMA joins hands with German-born, two-Michelin star chef Bjoern Alexander Panek to unveil a limited-edition tasting menu. Panek, the former Executive Chef of two-star Italian restaurant Octavium, and currently leading his Singapore-based restaurant MATERA, is returning to Hong Kong for this special collaboration.

As part of the LUBUDS’ group inaugural programme, Chef Panek has designed a limited, exclusive tasting menu that fuses culinary traditions from Italy, China, Japan, and Thailand into one seamless experience. The tastefully curated dishes from Chef Bjoern will meld effortlessly with signature offerings from LUMA and the neighbouring fine-dining Chinese restaurant, The Queen.

Guests can choose between 6-course (HK$980 per person) and 8-course (HK$1380 per person) options available for dinner service, which begins at 7 PM.

The menu kicks off with a tantalizing array of innovative appetizers that emphasize fresh ingredients, such as Tomato with Passion Fruit, Chia Seed, and Tomato Jelly; and Chef Bjoern's signature Scallops Burrata with Caviar and Chives.

The second course offers diners seafood options, including Red Prawn Carpaccio with Citrus Jelly, and Lobster with Carbonara Sauce, Eggyolk, and Parmesan. Those opting for the eight-course menu are treated to Thai-Style Squid Spaghettini with Crispy Garlic, or Red Prawn Ravioli with XO Sauce and Dried Scallops.

The dining journey ventures into meat-centric mains, including the Black Cod Papilotte in Sichuan Chili Stock, a signature from The Queen, and the Pigeon with Black Truffle, Butter Mushrooms, and Pepper – one of Chef Bjoern’s cherished recipes.

For the penultimate course in the eight-course menu, diners can choose from the USDA Rib Eye Cap, Donabe Rice, Comte, Beef Tendons; Smoked Roasted Local Chicken & Organs with Lotus Rice; or the Lobster Tofu Linguine.

To conclude the meal, dessert options include LUMA’s Flamed Little Lemon or Chef Bjoern’s Melon with Tofu Ice Cream, Limoncello, and Mint, both offering a surprising play on textures and flavours.

Guests wishing for an enhanced experience can opt for a wine pairing at an additional cost of HK$498 for 4 glasses, or HK$698 for 6 glasses. Adding to the allure, Chef Bjoern will personally cook on-site at LUMA every Sunday and Monday throughout the collaboration.
