Felix at The Peninsula Hong Kong announces new Chef de Cuisine

The Peninsula Hong Kong appoints Aurelie Altemaire as the new Chef de Cuisine at the hotel rooftop restaurant, Felix. Chef Aurelie brings over two decades of culinary experience to her new role and has worked in numerous Michelin-starred restaurants, including Le Bristol in Paris and L'Atelier de Joel Robuchon in London.

From an early age, Chef Aurelie had a passion for gastronomy and has spent many years perfecting her craft and her creative, inspired cuisine draws inspiration from her travels.

Her new, five-course "Felix Experience" menu is now debuted at Felix, showcasing the finest flavors and ingredients of the season. The menu features shareable dishes, including Kagoshima A4 sirloin with braised cheeks, mashed potatoes, mild spices, and miso jus, and Boston lobster a la plancha with arroz bomba and saffron emulsion.

To accompany the cuisine, Head Mixologist François Cavelier at Felix Lab has created a range of imaginative citrus-infused cocktails, for example Bergamot Martini, Rangpur Sonic and Etna Negroni. François brings a culinary approach to crafting libations, embracing sustainability, creativity, and seasonality. He has also utilised by-products of the culinary preparations to create premium ingredients for his cocktail creations.

The Felix Experience Menu is priced at HK$1,588 per person, with various beverage pairing options available at an additional cost.
