MONO Team Takes Over Upper House's Chef's Room for 4 Days

MONO, the One-MICHELIN -starred Latin American restaurant on On Lan Street, will close its doors from Aug. 23 to 31, 2026 for a renovation aimed at making the space feel more intimate.
But before the shutters come down for the refresh, Chef-Founder Ricardo Chaneton and his team are briefly relocating to one of the city's most exclusive tables: Chef's Room at Upper House.
From Aug. 26 to 29, 2026, MONO will take over the 49th-floor culinary studio for a four-day residency, bringing its refined take on Latin American gastronomy to Pacific Place with views of Victoria Harbour. Chef's Room, run in partnership with Chaneton at Upper House, describes itself as a space for intimate residencies by global culinary talent, and this MONO takeover is shaping up to be one of its highlight bookings this year.
The pop-up will run two seatings a day. Lunch is a five-course menu for HK$1,488, featuring MONO staples like the Foie Gras Taco and the 21-Ingredient Black Mole. Dinner steps things up with an eight-course menu for HK$2,888, including the Danish Langoustine and Ecuadorian Cacao Expressions.
Guests can expect a front-row seat to the action: the format is designed to let diners watch the cooking process up close and interact directly with the chefs, rather than admiring from a distance.
Just a few notes: dietary restrictions can't be accommodated within 48 hours of the reservation, and latecomers will be served a shortened version of the menu with no refund. Seatings are limited, and reservations can be made online via this link.
