Delish Sips: Poblacion’s Newest Elusive Hideout Hidden Behind Blue Door 304

Bar Story

Tucked on the 3rd floor of an unassuming building in the heart of Poblacion, Blue Door 304 is a low-lit, intimate speakeasy where guests find refuge from the noise and chaos of Makati’s nightlife. The atmosphere leans elusive – from the entry after three knocks on the door to the vintage, men’s-club interior – until a corner of pop culture references gently breaks the mood and adds a touch of quirk.

Located just a few steps away from some of the most popular spots in Poblacion, this speakeasy offers a quiet alternative to the heavy beats and wild nights often spelled out nearby, with smooth jazz in the air and a pace that invites you to slow down.

Vibe and Venue

With just three knocks on the antique bronze door knocker and a brief check through the small window, you step into a warm, low-lit room with lamps on every table. Turn your head and the bar comes into view, neatly stocked with the spirits that shape the menu. Turn again and you notice the details – the amber brown wood textures, two vinyl record players on the shelves, the shadows, and even the quiet corners that feel intimate.

The windows give a glimpse of Poblacion’s nightlife, letting guests watch fragments of other people’s evenings play out. Toward the back, a small nook provides a little more privacy, tucked away from the room’s livelier and more curious eyes.

It may feel small at first, but it’s in this detail that makes the space quite lived-in – as if it had been here, quietly observing everyone’s stories, for a long time.

How Much are the Food and Drinks

Blue Door 304 offers two menus – one for its signature and classic cocktails, and another for the rest of its beverage selection. The first menu is priced between P450 and P500, while the second ranges from P250 to P1,499. The speakeasy also offers bottles of hard liquor, priced from P3,500 to P6,500.

A small selection of bar chow is also available, with some sourced from nearby establishments and priced between P185 and P340.

For this Delish Sips review, we sampled three of Blue Door 304’s signature cocktails, along with one served in a carafe. The speakeasy leans into sweet and spirit-forward creations, with each drink designed to be experiential rather than strictly formulaic.

It is playful, in a sense, but is also controlled and considered – through its flavor, presentation, and even its subtle novelty.

Baby It’s Tonight

Probably one of the most approachable drinks on the menu, it is Blue Door 304’s strawberry twist on a whiskey sour.

The strawberry adds a soft sweetness that perfectly cuts through the sharpness of the whiskey, without fully masking it and creates a balance between gentle sweetness, slight tartness, and easy drinkability. Smooth and comforting, making it a perfect choice for one’s first drink of the night, or for those who prefer softer profiles while on a night out.

Blue Door

This is the cocktail that best reflects the speakeasy’s elusive character. With no clear ingredient list or breakdown, it invites curiosity from the first sip. You begin to guess its contents – bubblegum, gin, fruit – but nothing quite fits the bill.

In the end, the mystery is the fun in it. Don’t be fooled by the foam or its initial lightness; beneath it all is a bold, spirit-forward drink with real presence. It’s not delicate, but it is quite expressive – a cocktail with its own personality and flair.

It’s the perfect spectacle for the evening, opening a night filled with conversation, and possibly a bit of delusion.

Summer Rain

(Gin, Vermouth, Lime Schanpps, Angostura Bitters, Honey)

Quiet and clever, this cocktail is clean, direct, and a little sharp around the edges. With a few spritzes of calamansi, the drink instantly becomes brighter, with its sharpness dulled with a gentle, citrusy lightness.

This small interaction allows the drink to become personalized, reinforcing the intimate and considered experience the space encourages. It turns the focus away from sweetness and leans towards balance – serving the drinker not through indulgence, but through slight restraint.

It’s also another option if you’re looking to open the night with a light drink, but don’t be mistaken by its appearance.

If you’re looking to kick off a night of Poblacion bar-hopping with friends, this is the obvious choice – and a crowd-pleaser for a good reason.

The blue pea flower gives the drink its soft, vivid purple hue, while the mix remains clean and not overly sweet. Unlike many classic mojitos, which can lean sugary and served with a salt-rimmed glass, this version is fresher and lighter, with a brightness that’s more refreshing rather than indulgent. It’s an easy, invigorating start to the night – a conversation starter that goes down smoothly, especially in a setting where not everyone wants something heavy or sweet right away.

What We Liked / Didn’t Like

Blue Door 304 is built around intimacy, secrecy, and a sense of quiet mystery – and the space largely delivers on that promise. Upon entering, patrons are greeted by the warm, softly lit interior and vintage-inspired décor that immediately set a mood that feels private without the feeling of isolation. It also avoids the heavy darkness many speakeasies rely on, instead choosing a lighter, more refined atmosphere that still feels secluded.

The bar also positions itself as a jazz and vinyl listening space, with a curated shelf of records available for patrons to select from. This adds a thoughtful and personal layer to the experience, allowing guests to shape the mood of the room and their night in an intimate and interactive manner.

As for the menu, the drinks feel thoughtful and well-balanced, though they tend to lean toward the familiar. Our standout for the night was Summer Rain, whose nuanced profile becomes especially approachable with just a spritz of calamansi. It struck a quiet balance that felt both considered and personal, especially with a bar that prides itself on such.

The other drinks we tried leaned more toward comfort than surprise – including Blue Door, which, as the bar’s signature, feels like it still has space to explore more of its own personality. This isn’t to say that any of the drinks disappointed; rather, the menu feels like it can be pushed into something even more unique and distinctive, with room to further deepen and refine its flavor stories.

Having freshly opened, Blue Door 304 has a bright future ahead to define their unique flavor and identity in a neighborhood filled with options on every corner.

What You Should Order

Start your night with Summer Rain – it’s the kind of drink that’s both clean and refreshing; perfect to understand the bar’s ambiance. For the second drink or even as a palate cleanser, reach out for the Blue Door Mojito carafe; it’s not as sweet and remains on the same profile as the first drink.

Dr. Wine Poblacion Prescribes a Six-Course Italian Wine Feast

Dr. Wine Poblacion is hosting "The Italian Feast Experience" on Aug. 13, 2026. In partnership with Prestige Cellar Selections Inc., the wine-paired Italian dinner is billed as Prescription No. 001 in the bar's new "Dr. Wine Prescription Series," under the header "The Doctor Has Prescribed Italy."

Priced at P4,980 per person, the dinner opens with Prosecco and canapés, including Wild Mushroom Arancini, Crispy Mortadella with stracciatella and lemon, and a Raw Tuna Tartlet finished with gremolata, all served alongside Ferrari Maximum Blanc de Blancs from Trentodoc.

From there, the antipasti course pairs Manzano Tonnato — chilled sliced beef under a creamy tuna, caper and lemon sauce — with a Cantina La-Vis Pinot Grigio from Trentino-Alto Adige. A seafood salad, Insalata di Mare, tossed in citrus, olive oil and celery, follows with a Querciabella Mongrana Bianco from Tuscany.

The secondi lineup is where the menu earns its "feast" title. Guests get a choice-worthy trio: Bistecca alla Fiorentina, a grilled Chianina T-bone with rosemary, arugula and Parmesan, matched with a Querciabella Chianti Classico; Guanciale di Bue con Polenta, slow-braised beef cheeks over creamy polenta with roasted vegetables, paired with a Barolo Monfalletto from Piedmont; and Pappardelle al Ragù d'Anatra, egg ribbon pasta in a slow-simmered duck ragù with wild herbs, served with a Ripasso Valpolicella Classico Superiore from Veneto.

Dessert is a classic Tiramisu — espresso-soaked ladyfingers layered with mascarpone and cocoa — closed out with a three-year Nardini Grappa Riserva from Bassano del Grappa.

Sarsa and Carlo's Team Up for a One-Week Filipino-Italian Mashup

Two of Makati's favorite kitchens are about to share a table.

Sarsa, the Filipino restaurant that landed a MICHELIN Bib Gourmand in the 2026 guide, is teaming up with Carlo's — the self-described friendly neighborhood spot known for pizza and pasta — for a one-week collaboration, running from July 25 to 31, 2026.

While no other details have been released, it's bound to be a cross-cultural mashup. Think Filipino comfort food meeting Italian-American classics. Plus, with Sapporo Premium Beer PH and Philippine Wine Merchants backing the event, it means the week won't be short on beer and wine to pour.

The pairing was announced with very simple and breezy posts on Instagram, matched with cute illustrations. But nothing has been revealed about the menu. For interested diners, the fun is in showing up to find out.

Sarsa, residing in Legazpi Village, was praised by the MICHELIN Guide for their laid-back aesthetic where flavor wins over fuss. Signature plates lean generous and shareable, from kinilaw to lechon manok to a turon a la mode that closes the meal on a sweet note.

Carlo's brings the other half of this collab. An American-Italian restaurant, they serve handmade pasta and a New Haven-style pizza that comforts hearts aside from filling up stomachs.

Dev Bar Partners with Chef Cristobal of Rabbit Room for Let 'Em Cook Year 3

Honeycomb Manila is firing up their cocktail test kitchen for a third year. And this time, they're telling Chef Rap Cristobal to (literally) let 'em cook!

The collaborative studio's Dev Bar returns on July 25, 2026, with "Let 'Em Cook," an experimental cocktail-and-dinner experience built around the regional cooking of Chef Cristobal, the chef behind Filipino bistro Rabbit Room.

Two seatings are available: 6 to 8 PM, and 8:30 to 11 PM. Priced at P3,500 per person, the limited-edition dinner is set at Honeycomb Manila in Double Dragon Plaza. Dev Bar is Honeycomb's in-house cocktail test kitchen, a pop-up hosted by "drink devs" Kayo Cosio, Dave Dource, and JC Carandang. The team says, "No two devs are alike."

Let 'Em Cook's premise is simple: Four artists. Four cocktails. Four plates. Organizers describe the event as "an art project presented in food and beverage." The night is themed around "alon at ani," a nod to both sea and harvest. Diners can expect a menu that leans into regional Filipino cuisine that fully harnesses the Philippines' bounty.

One caveat, however, is that because of the format, the kitchen is unable to do ingredient substitutions. Guests with allergies are asked to message Honeycomb ahead of time.

One World Deli Alabang invites everyone to its al fresco area tomorrow, July 11, with "Grill & Gather," an unlimited open-fire cookout staged with Big Bark PH, beginning at 4 PM.

The collaboration puts the deli's chefs alongside the Big Bark team for an afternoon of backyard-style grilling, perfectly paired with live music and cold brews. Seats are limited and must be reserved in advance by scanning the QR code on the event posters.

Of course, the main event is the food. And both restaurants pulled out the big guns with this mouthwatering menu. Coming off the asador pit: leg of lamb, USDA ribeye, clean chicken, pork belly, and Polish sausage. From the burger pit: a classic cheeseburger, the Honey B, and a pulled pork sandwich. Sides include pasta salad, mashed potatoes, and a nacho bar. Every item is unlimited. Yes, get as much as you can stomach all afternoon!

A solo ticket costs P1,700, but a duo ticket offers the best value at P3,100.

Shake Shack to Ladurée: 13 New F&B Brands are Coming to NAIA T3

Flying out of Manila is about to get a whole lot more delicious.

New NAIA Infra Corp. (NNIC) announced 13 new food and beverage brands at Terminal 3's international airside, set to open by the end of August 2026. On the domestic side, a 350-square-meter Starbucks Reserve is slated to open at T3 as early as July.

The incoming lineup is a dream food court that easily rivals a sad airport sandwich before a long-haul flight: Shake Shack, Ladurée Paris, Ramen Nagi, Wildflour Restaurant, Conti's Bakeshop & Restaurant, Cibo, Caravan Black Coffee, BHC Chicken, Gloria Maris, Love A Bowl, Venchi 1878, Baby Crosta, and Voyager by Chele.

With multiple cuisines to choose from, passengers have plenty of options, from light snacks and easy meals to heartier offerings.

NNIC said the additions are part of an ongoing effort to make better use of terminal space by converting underutilized areas into passenger-serving amenities. The expansion builds on improvements already made at Terminal 3, where more than 40 restaurants and retail concepts have opened since NNIC assumed control in September 2024.

In their statement, NNIC said: "Our goal is to make T3 more useful and comfortable for more passengers. We are reworking available spaces so they can serve travelers better throughout the day."

The changes are already drawing international attention. UK-based Airport Parking and Hotels released a list in March 2026, ranking NAIA seventh globally for layover food options and sixth for most affordable airport lounge access. Their study assessed the world's 50 busiest airports.

"We want to make sure that our limited terminal space benefits more travelers," NNIC said. "Better food choices, more comfortable waiting areas and more useful passenger amenities are part of the airport experience we want to build."

CEV Siargao Brings MICHELIN-Starred Toyo Eatery and Inatô to the Beach

Who said you can't have a MICHELIN-star lunch experience by the beach?

CEV Siargao is hosting its fourth Island Style Chef's Table on June 14, 2026, at Mam-on Island in Siargao. The all-day event runs from 9 AM to 5 PM, bringing together CEV, Toyo Eatery, and Inatô for a curated island feast. Tickets are priced at P6,800 per person, covering transportation, food, and drinks.

The centerpiece of the experience is a kamayan, also called a boodle fight — gathering around a communal spread, often laid out on banana leaves, and eating with your hands. CEV, along with one MICHELIN-starredToyo Eatery and one MICHELIN-starred Inatô, will curate the menu together, featuring lechon, kinilaw, "at iba pa."

For guests, the day starts at 9 AM. The group departs from General Luna, arriving at Mam-on Island by boat an hour later. The following two and a half hours are unscheduled; guests are encouraged to relax, swim, walk on the beach, and more. The Island Feast begins at 12:30 PM and runs until 2:30 PM. Everyone departs from the island at 3:30 PM and arrives back at General Luna by 4:30 PM.

It's the fourth installment of CEV Siargao's ongoing Island Style Chef's Table series. Toyo Eatery, the Manila-based restaurant owned by Chef Jordy Navarra, has earned worldwide recognition for their use of local ingredients and modern reinterpretation of Filipino cuisine.

The third part of this one-time roster is Chef JP Cruz of Inatô. Before launching his own kitchen, Cruz spent seven years as sous chef at Toyo Eatery. At Inatô, he draws from that training and early lessons learned from his mother to present his own interpretation of Filipino cuisine.

Hosting the affair is Chef David del Rosario, the Executive Chef and Owner of CEV Siargao. A former finance professional who spent a decade in the industry, he opened CEV with the ambition of promoting kinilaw as one of the Philippines' most essential dishes.

ICYMI: There's a New Cafe at National Museum of Fine Arts

Papakape has opened its newest cafe inside the National Museum of Fine Arts, bringing their Filipino-inspired coffee, cream sodas, and community-first spirit to one of Manila's most visited cultural landmarks.

The cafe opened last Monday, coinciding with International Museum Day on May 18, 2026. It is located on the 4/F Sen. Benigno Aquino Jr. Foyer, giving museumgoers a new stop for coffee before or after exploring the galleries.

Open daily from 9 AM to 6 PM (last call by 5 PM), aligning with the museum's schedule. It joins Papakape's existing outposts in Fort Santiago, Palanan, and Rizal Park, though the Rizal Park branch is currently closed.

The opening marks another milestone for Papakape, which began during the height of the pandemic as a passion project by father-son duo Rex and Manu. What started as a tiny coffee hut in their home garage grew into a neighborhood favorite in Makati, known for their homey atmosphere.

At the National Museum, the cafe continues its mission of connecting people to community, culture, and the world through coffee.

The menu features Papakape's familiar "standards," including Americano, Coconut Latte, Condensada Evaporada, Tres Leches, and more. Prices for drinks range from P150 to P260, with options to serve hot or iced.

Half Saints and The Underbelly Collide for 'Saint Billy' Menu

Half Saints and The Underbelly are bringing together comfort food and Japanese inspiration in "Saint Billy," a limited-time crossover menu available from May 28 to June 11, 2026.

The collaboration is available at all Half Saints branches and The Underbelly, giving Manila diners two weeks to try five dishes co-created by Chefs Christine Roque and Jo Arciaga of Half Saints, and Chefs Noel Mauricio and Jackson Chua of The Underbelly.

Both restaurants' distinct personalities come together in this menu, creating "beautifully chaotic comfort food."

Saint Billy is divided into two sections: Saints and Sinners. Under "Saints," diners can try Billy's Holy Ribwich (P375), made with a shokupan bun, grilled chashu, onions, horseradish sauce, and pickles. The Crispy Pork Abura Soba (P450) combines bagnet, stracciatella, calamansi kosho, and menma. For dessert, the Calamansi Coconut Granita (P275) brings together calamansi crémeux, dried sponge cake, and orange ferment.

The "Sinners" side features the Inferno Tantan Puff Pizza (P375) with yuzu cream cheese, tantan sesame pork, crispy nori, and wasabi honey. Also on the lineup is the Pork & Brie "Pain" au Chocolat (P395), a black cacao croissant filled with braised pulled pork, Brie de Meaux, calamansi kosho, and daikon.

With these bold flavors, the menu dares to ask: "What happens when Saints dare to venture into the Underworld?"

Diners beware, you might get addicted to a different kind of heaven and hell.

Founded in Quezon City in 2018 by longtime friends Christine and Jo, Half Saints has become known for their made-from-scratch approach and use of both local and international ingredients. They currently have branches in Quezon City, BGC in Taguig, and Tokyo, Japan.

The Underbelly, on the other hand, was founded by award-winning designer and illustrator Dan Matutina and Tasteless Food Group Founder Charles Paw. Curiosity and constant experimentation guide their menu, turning them into one of Manila's must-try ramen bars.
