Louise Hong Kong is bringing Chef-Founder Julien Royer back to the kitchen for an exclusive two-night, four-hands dinner with Executive Chef Loïc Portalier on Nov. 12 and 13, 2026. The eight-course tasting menu is priced at HK$2,088 per person.
The limited-time collaboration at the one-MICHELIN-starred French restaurant promises a culinary dialogue between two chefs whose shared heritage meets seasonal ingredients, classic French techniques, and Asian influences.
The eight-course menu moves from delicate seafood to rich, comforting flavors, beginning with an oyster dressed in green Tabasco and livèche, followed by a takoyaki-inspired Beaufort, then a potatoes & seaweed croustillant: a cheese creation with burnt cream and sea urchin. A scallop course pairs vichyssoise with leek oil and caviar, while agnolotti brings together orange and saffron for a vibrant pasta dish. Atlantic cod is served with Jerusalem artichoke, bisque and tonka, before the menu turns to a pigeon pie featuring Bresse chicken and foie gras.
Dessert keeps things equally considered, with honey and toasted walnut accompanying a yoghurt course, followed by clementine with grilled chestnut and hazelnut praline. The experience also features a selection of wines, including Clandestin's Boreal “Cuvee Speciale Louise” 2022, Knewitz Riesling Trocken 2024 and Sauternes Cru Barrejats 1998. Guests can opt for a wine pairing at an additional HK$898 per person.
Set in a two-storey heritage building at PMQ in Central, Louise will host the dinner over two evenings, with seating arrangements varying by date. The entire venue will be available for the Nov. 12 dinner, while the Nov. 13 experience will take place in the first-floor main dining area and ground-floor Drawing Room.
Louise is known for traditional French delicacies, inventive combinations, and warm hospitality.
