Employees Only Singapore x Dirty Supper, Dirty Sips Takeover This May 12

Employees Only Singapore is about to get a little dirty — just enough to make a weeknight exciting in the best way possible.
Dirty Supper and Dirty Sips will take over the cocktail bar for one night only on May 12, 2026, bringing with them a joint food and drink menu to Employees Only from 6 to 9 PM.
This collaboration, "two teams, one menu," will pair the New York-born bar's polished hospitality with Dirty Supper's produce-driven cooking and Dirty Sips' savory, kitchen-led cocktails.
Reservations are recommended for the event, which is sponsored by Dyspatchr.
For the May 12 event, the Employees Only Singapore side of the menu includes cocktails priced at S$24 each, such as the "Tomato Nose," made with Teremana Blanco Tequila, tomato shrub, Giffard Crème de Pêche liqueur, and Perrier soda. There's also the "Acai Atelier," with Wheatley Vodka, house-made acai green tea, hibiscus cordial, honey syrup, and egg white. "Texas Spring Sour" brings a different vibe with Buffalo Trace Bourbon, lemon juice, clarified apple juice, cinnamon syrup, orange bitters, and chardonnay. Lastly, "Hi-Octane" delivers high energy with Nusa Cana Dark Rum, Rosso Vermouth, Dry Curacao, chocolate bitters, and Angostura bitters.
The home turf food menu consists of Sourdough & Kajmak (S$12), Chili Crab Bao with picked cucumber and fried Man Tou (S$22), Grilled Endive with green herb Aioli, and almond crumble (S$16), Canadian Pork Cap with Mojo Verde and Jus (S$22), and EO B&J with vanilla gelato, cookie dough, and chocolate chip (S$22).
Dirty Sips is bringing their own cocktails (also at S$24 per glass) and food menu. Cocktails include the "Picked Lemon Martini" with Mr. Boston Dry Gin, picked lemon brine, and Baldoria Umami. There's also the "White Boy Negroni," with Mr. Boston Dry Gin, micro shiso, picked apricot, and Vinho Verde; as well as the "Going Bananas," with Buffalo Trace Bourbon, carrot brown butter, banana, and Peychaud's bitters. Tequila and mezcal lovers will enjoy "Chef's Water," which mixes Teremana Blanco Tequila, Cacao Mezcal, yellow bell pepper, habanero, white chocolate, sonic, and dairy. Lastly, the "Black Garlic and Honey Sour" is a curious mix of Los Vecinos Mezcal Espadin, black garlic and honey, and citrus.
When it comes to their food menu, Dirty Supper is keeping things exciting with Pig Head Croquette with white anchovy (S$16), Forgotten Carrot with whipped feta and buckwheat (S$16), Smoked Mackerel with fried chicken skin (S$18), Raw Prawn with macadamia, pickled watermelon rind, and cucumber (S$22), and Lamb Tartare with water chestnut, leeks, and picked chili (S$22).


The one-night partnership brings together two names with strong personalities. Employees Only, which first opened in downtown New York in 2004, has built a reputation as one of the modern cocktail world's defining hospitality bars. Its Singapore outpost opened in June 2016, a tropical sister to its city counterpart. Tucked behind a fortune teller's lair, the bar has since become a fixture in the city-state's drinking scene, with recognition from Asia's 50 Best Bars, Asia's 10 Best Bars, and World's Top 500 Bars.
On the other hand, Dirty Supper, spearheaded by Chef-Owner Peter Smit, champions whole animal cooking, grilling, and unexpected ingredient pairings. The restaurant's ever-changing menu is intentionally lean, guided by what produce is available on the day.
Dirty Sips, the beverage side of the Dirty Supper kitchen, continues to bring that philosophy into their glasses. Their bar program focuses on creative cocktails that incorporate elements from the kitchen, savory, and just as unexpected. They also serve wines spanning established and lesser-known regions, sustainable and minimalist producers, and craft beers from artisanal breweries.
