80/20
This acclaimed restaurant is the brainchild of husband-and-wife chefs Napol "Joe" Jantraget and Saki Hoshino. The name 80/20 comes from the ratio that the restaurant uses between Thai and imported ingredients, but after its renovation in 2019, the establishment has switched to only using 100% local produce. It has garnered one Michelin star and been named among Asia's 50 Best Restaurants in 2020 and TIME's World's Greatest Places in 2019. The local-forward restaurant's seasonal tasting menus are at once innovative and unpretentious, making use of the very best of Thailand's ingredients from sustainable sources. Bo.lan
Real-life-couple and chefs Duangporn "Bo" Songivsava and Dylan Jones first met when they both joined Nahm in London before going on to put up Bo.lan in Bo's mother country in 2009. Bo has been awarded Asia's Best Female Chef as part of Asia's 50 Best Restaurants thanks to her culinary vision and advocacy for food security. Bo.lan's mission is to become a zero-carbon footprint restaurant in the city, taking efforts to do their part by minimising the establishment's use of single-use plastic, using LED lights that consume less paper, upcycling cooking oil into soap, and turning organic waste into fertiliser for their garden, just to name a few.

Haoma
Haoma along Sukhumvit Road prides itself as Thailand's first-ever urban farm and zero-waste restaurant smack-dab in the middle of Bangkok. Chef Deepanker Khosla is at once committed to achieving food sustainability and food excellence, realising both in his dream-come-true passion project Haoma. The restaurant serves reimaginations of authentic Indian cuisine, which Khosla calls "Neo-Indian," making use of the regenerative aquaponics urban farm. Haoma, at present, conserves over 100,000 litres of rainwater, which it uses to grow fish in. For ingredients that Haoma can't produce, it grows in Chiang Mai or sources from local sustainable and ethical suppliers. Haoma, which has one Michelin star and one Michelin green star, has been recommended by the Michelin Guide as "worth a stop."

Le Du
Mistook this restaurant for French? It isn't. Le Du is rooted in the Thai word "season” and this is evident in the restaurant's commitment and focus on creating culinary masterpieces using season produce that spotlight Thailand's rich culinary culture and agricultural riches. Le Du only sources ingredients from local suppliers who grow their own produce, while its wines are painstakingly chosen by its certified sommelier from the world over. Baan Tepa
Baan Tepa, owned and led by chef Tam Chudaree Debhakam, earned its first Michelin star in November 2022. Debhakam follows a philosophy of sustainability in her craft, making use of indigenous varieties of vegetables and crops to create eco-conscious and impeccable seasonal menus for her guests.
