Five Restaurants in Bangkok That Champion Sustainability and the Local

Restaurants in Bangkok That Champion Sustainability

Restaurants run aplenty in Bangkok, but few can say they truly champion sustainability and the local. These five restaurants in the city lead the way in this regard, from supporting local producers and suppliers 100% and offering tasting menus according to what's in season, to making use of every ingredient and scrap to minimise the waste produced in kitchens. Did we mention these restaurants are regarded among Asia's 50 Best Restaurants and recommended and starred by the Michelin Guide?

Don't miss out on these five restaurants in Bangkok this 2023!

80/20

This acclaimed restaurant is the brainchild of husband-and-wife chefs Napol "Joe" Jantraget and Saki Hoshino. The name 80/20 comes from the ratio that the restaurant uses between Thai and imported ingredients, but after its renovation in 2019, the establishment has switched to only using 100% local produce. It has garnered one Michelin star and been named among Asia's 50 Best Restaurants in 2020 and TIME's World's Greatest Places in 2019. The local-forward restaurant's seasonal tasting menus are at once innovative and unpretentious, making use of the very best of Thailand's ingredients from sustainable sources. To make a reservation at 80/20, go here.

Location: 80/20, 1052-1054 Charoen Krung Road

Bo.lan

Real-life-couple and chefs Duangporn "Bo" Songivsava and Dylan Jones first met when they both joined Nahm in London before going on to put up Bo.lan in Bo's mother country in 2009. Bo has been awarded Asia's Best Female Chef as part of Asia's 50 Best Restaurants thanks to her culinary vision and advocacy for food security. Bo.lan's mission is to become a zero-carbon footprint restaurant in the city, taking efforts to do their part by minimising the establishment's use of single-use plastic, using LED lights that consume less paper, upcycling cooking oil into soap, and turning organic waste into fertiliser for their garden, just to name a few.

To book a table at Bo.lan, you may contact 02-260 2962 or email [email protected]

Location: Bo.lan, 24 Soi Sukhumvit 53rd Alley, 10110 Khet Wattana

Haoma

Haoma along Sukhumvit Road prides itself as Thailand's first-ever urban farm and zero-waste restaurant smack-dab in the middle of Bangkok. Chef Deepanker Khosla is at once committed to achieving food sustainability and food excellence, realising both in his dream-come-true passion project Haoma. The restaurant serves reimaginations of authentic Indian cuisine, which Khosla calls "Neo-Indian," making use of the regenerative aquaponics urban farm. Haoma, at present, conserves over 100,000 litres of rainwater, which it uses to grow fish in. For ingredients that Haoma can't produce, it grows in Chiang Mai or sources from local sustainable and ethical suppliers. Haoma, which has one Michelin star and one Michelin green star, has been recommended by the Michelin Guide as "worth a stop."

Location: Haoma, 231/3 Sukhumvit Soi 31

Le Du

Mistook this restaurant for French? It isn't. Le Du is rooted in the Thai word "season” and this is evident in the restaurant's commitment and focus on creating culinary masterpieces using season produce that spotlight Thailand's rich culinary culture and agricultural riches. Le Du only sources ingredients from local suppliers who grow their own produce, while its wines are painstakingly chosen by its certified sommelier from the world over. Le Du has been named among Asia's 50 Best Restaurants in 2022 and has also earned one Michelin star under its belt. To make reservations at Le Du, go here.

Location: Le Du, 399/3 Silom 7 Alley, Khwaeng Silom, Khet Bang Rak, Krung Thep Maha Nakhon

Baan Tepa

Baan Tepa, owned and led by chef Tam Chudaree Debhakam, earned its first Michelin star in November 2022. Debhakam follows a philosophy of sustainability in her craft, making use of indigenous varieties of vegetables and crops to create eco-conscious and impeccable seasonal menus for her guests.

Prepare for an interactive experience when dining at Baan Tepa, which first takes you to a tour of the garden and then the kitchen where they join the chefs with a course. Baan Tepa's menus are inspired by Tam's travels around Thailand, making sure the tales of the producers and farmers are not forgotten in each dish. Make your reservations on Baan Tepa's website.

Location: Baan Tepa, 561 Ramkhamheang Road,Bangkapi

At the MICHELIN-starred Yu Ting Yuan, tucked inside the luxe Four Seasons Hotel Bangkok at Chao Phraya River, a bold new chapter is starting for Cantonese cuisine.

Executive Chinese Chef Tommy Cheung is turning the page with a bold, boundary-pushing culinary revamp that redefines what Cantonese cuisine can be.

“This is not a seasonal refresh, but it’s a complete evolution,” said Chef Tommy. “We’ve introduced new ingredients, refined our techniques, and crafted menus that reflect where Cantonese cuisine is today, and where it’s going.”

Drawing on his roots in Hong Kong’s dynamic kitchens and a family legacy steeped in culinary tradition, Chef Tommy’s new menus showcase modern finesse while remaining deeply respectful of Cantonese heritage.

Tasting Menu

Chef Tommy’s new Tasting Menu is a love letter to premium ingredients and elegant technique: think Double-Boiled Fish Maw Soup infused with rare Kunlun snow chrysanthemum, morel mushroom, and American ginseng, and barbecued Hokkaido pork nestled in silky handmade noodles.

The Yu Ting Yuan Menu Experience, meanwhile, is a greatest-hits collection of the restaurant’s most iconic dishes, with highlights like the Signature Barbecue Platter to Steamed Crab Claw Topped with Kristal Caviar.

For those who prefer to go à la carte, the new menu is just as ambitious. Comfort food classics are elevated without losing soul: there’s Steamed Abalone on Garlic-Glossed Glass Noodles, Deep-Fried Eggplant with Garlic so crisp it practically shatters, and Deeply Savory Chicken in Clay Pot with Scallions.

With soaring floor-to-ceiling windows framing serene reflective ponds and lush gardens, Yu Ting Yuan immerses guests in a harmonious blend of dark wood and gold accents that elevate the art of Cantonese cuisine into a truly refined experience.

What Did We Order

Jharokha by Indus Chutney Set

We ordered a selection of dishes based on the chef’s recommendation, all of which impressed us with their gastronomic approach and refined plating, complemented by a refreshing twist.

We started off with their new Chutneys set (THB500), which includes a collection of green chili chutney, baingan chokha, roasted beets, aamshoto, and roasted tomato. Beautifully plated and visually appealing, the chutney plate also features miniature naan and fried lotus root on the side. The naan was a delightful addition, allowing us to dip it into each chutney and enjoy the various flavors. The tangy-sweet aamshoto and the mildly buttery baingan chokha were particularly favorites, offering a unique taste that really stood out.

One of the standout dishes is Dahi Ke Kebab (THB390) — an unusual and snowy twist on vegetarian North Indian kebabs. These kebabs are deep-fried, with a crispy exterior wrapped in kataifi, a pastry-like dough, and filled with spiced yogurt and a parsley cream topped with yogurt snow. Witnessing the staff serve the dish, as they drizzle the frozen yogurt snow over the kebabs, is a visual delight. When you take a bite, the satisfying crunch of the kataifi gives way to the icy, mildly sweet yogurt filling, creating an exquisite melting sensation in your mouth. The yogurt snow adds a sweet touch that perfectly balances the mildly spiced filling, and a dollop of mango chutney elevates the experience — truly a chef's kiss. This must-order dish serves as a perfect appetizer.

Kofta Saag (THB490) pairs beautifully with Chilli Cheese Naan (THB180), creating a delightful blend of mild spice and robust flavor. Think crispy fried vegetable dumplings crafted from fresh paneer and vibrant veggies, all enveloped in luscious spinach gravy and wrapped in gooey, cheesy naan. Each bite is a comforting embrace, making this dish a warm and satisfying choice for a main course.

Shergill Sling: A cocktail named after modern polo star Simian Shergill. This remarkable fusion of premium gin, luscious pomegranate, zesty lemon, and aromatic basil creates a vibrant concoction that perfectly embodies the dynamic spirit of contemporary Indian polo.

Shamshare Negroni: A bold reinvention of the classic Negroni, this cocktail features Indian gin and coffee-infused Campari, inspired by Shamsher Ali's boldness on the field. The fancy bubble on top makes it a perfect moment to pull out your smartphone and capture the bartender adding the finishing touch.

What We Liked

The Dahi Ke Kabab is an absolute culinary delight that will enchant your taste buds — you’re guaranteed to fall in love at first bite. This version of dahi ke kabab is a rare find, setting it apart from anything you’ve tasted elsewhere. The cheese naan is irresistibly delicious, offering a soft and warm texture with an indulgent cheesy blend that will leave you craving more.

For drinks, the Shergill Sling is a smooth, refreshing cocktail that pairs perfectly with all the dishes.

What We Didn’t Like

While the miniature naan is a unique addition to the chutney set, it could be softer and chewier. It's better to choose the 3-chutney set instead of the 5-chutney set, as the latter tends to overwhelm the palate with competing flavors.

What You Should Order

There's no doubt that the Dahi Ke Kabab (THB390) is a must-order dish. Additionally, the Kheema Pav (THB390) is highly recommended by the chef and is another tempting option at Jharokha. It features soft butter pav paired with richly spiced minced lamb, elegantly topped with confit yolk and a splash of burnt lemon.

For sharing, consider the Laal Maas (THB1,250), which consists of Australian lamb shank cooked in Mathania chili paste. This rich, mouth-watering curry is sure to satisfy your cravings. Alternatively, you can try the Charcoal Fish (THB1,150), which is a whole sea bass rubbed with masala, roasted over charcoal, and served with asparagus, burnt lime, pickled pears, and roasted tomato chutney.

When it comes to desserts, the Kesar Falooda is the ideal choice to satisfy your sweet tooth. This delightful dish features rose kulfi with saffron rabdi foam and vermicelli, making it not only refreshing but also the perfect way to cleanse your palate and indulge in a heavenly blend of sweet and nutty flavors.
