Wynn Palace Brings Gourmet Pavilion to Macau

Opening its doors on Apr. 29, 2025, this exciting new hotspot will offer a rich and diverse tapestry of flavors from the most exciting culinary brands across Asia, all gathered under one roof. There will be everything from Michelin-starred, award-winning cuisine to humble street food delights. 

Gourmet Pavillion's Chinese name is Fu Le Ting—meaning both "rich in flavor" and "the joy of eating." "Fu" stands for richness, while "Le" embodies the shared joy that comes from enjoying exceptional food with friends and family.

Designed by the renowned David Collins Studio, the Gourmet Pavilion is an elegant European-style marketplace, featuring classic European architecture that sets the stage for an unforgettable culinary journey.

Experience Indian heritage at Leela, a playful take on the country's cuisine with vibrant spices and unique twists. The MICHELIN Guide listed restaurant Fat Boy Dumplings will also make its way to the marketplace, featuring signature dumplings crafted by celebrity Chef Henry Zhang Zhicheng, known for their irresistible taste and authentic Beijing flavors. 

For sushi lovers, contemporary Japanese restaurant Sushi Masa offers a memorable Omakase experience, including a wide array of sashimi and sushi that caters to all tastes.

Additionally, make sure to try sought-after classics such as Unagi Yondaime Kikukawa, where the iconic eel rice has been perfected over a century, and Wumamii Beef Noodles: Taiwanese beef noodles in tantalizing tomato-braised broth.

This daring concept, co-created by Belgian-based David Ghysels, will elevate guests 50 to 150 meters above the ground on a suspended platform secured by industrial cranes. 

Enjoy a luxurious three or four-course meal prepared by a local chef, complete with a dining table and attentive service staff.

Adventurous diners eager to take their culinary journeys to new heights can anticipate an unforgettable spectacle. Since its inception in 2006, Dinner in the Sky has been a global success, gracing over 60 countries across five continents, including iconic cities such as Paris, Las Vegas, Dubai, Kuala Lumpur, and Tokyo.

The concept has also hosted exclusive events in the sky, such as a Monaco dinner for Prince Albert with legendary French chef Joël Robuchon at the helm. 

Other creative variations include a Beach Bar in the Sky, an Opera in the Sky featuring Lesley Garrett at the Tower of London, and even a Poker Match in the Sky during the Jerez MotoGP Grand Prix.

Wynn Palace's Wing Lei Bar Gets a Bold Refresh with Mark Lloyd’s Mixology

Attention cocktail aficionados! Under the leadership of Head Mixologist Mark Lloyd, Wynn Palace’s Wing Lei Bar is redefining Macau’s cocktail scene, blending classic techniques with a culinary twist and a personality-driven approach to its services.

A seasoned industry innovator, Lloyd has shaped bar concepts across five continents, including stints in Bangkok, Hong Kong, and Shanghai at the acclaimed J. Boroski

At Wing Lei Bar, indulge in cocktails in an interior reminiscent of a vintage jewelry box, which beckons customers to embark on a creative sensory journey. 

Lloyd prioritizes craftsmanship over modern gadgets, crafting cocktails with house-made infusions and repurposed ingredients like char siu off-cuts and avocado peels in his "Avorita" invention — creating a menu that’s both sustainable and surprising. 

Their selection includes both the classics, such as the Margarita, Sidecar, and Breakfast Gimlet, and more experimental cocktails, such as the Hong Kong favorite Yuenyeung, Pandantini, and the Passionfruit Martini

Ditching the scripted monologues of traditional hotel bars, Lloyd tailors each guest’s experience with a keen sense of individuality, allowing the bar’s ambiance and personalities to speak for themselves.

This March, Wing Lei Bar is kicking off its culinary-inspired guest shift series, launching on Mar. 13 at 8 PM with Union Trading Company (#48 on World's 50 Best Bars 2021). Led by General Manager Patrick Zhou, the Shanghai bar will bring bold spices and street-inspired flavors to Macau for a one-night-only event.

Meanwhile, Lloyd debuts his two-pronged cocktail program on Mar. 12, 2025.

Firstly, their redesigned signature menu features 12 reimagined takes on four classic cocktail styles — sours, stirred, classics, and alternatini — with a Wynn Palace twist. Next up, they are launching a bespoke bar program, where each drink is tailored through his signature four-question personalized approach.

Wing Lei Bar has already hosted industry heavyweights like Sebastian Atienza and Lucilia Calichio from Tres Monos (#7 on World’s 50 Best Bars 2024) and Lorenzo Antinori from Bar Leone (#2 on World’s 50 Best Bars 2024). Meanwhile, Sands Macao’s Copa Steakhouse serves up a five-course feast for MOP 1,888 per couple.
