Known as one of the favorite comfort foods of many Filipinos regardless of the weather, beef pares mami is a classic noodle soup dish that combines two staples: beef mami and beef pares. Pares (or pairs in English translation) is made of beef brisket (cut into cubes), beef tendon (litid), miki noodles, spring onions, star anise, and other flavorful additives.
You can find a slew of paresan (eateries serving pares) along the roadsides of Metro Manila. Our team spotted some places where you can eat affordable yet delectable pares meals around the metro.
The Original Pares Mami House
With five branches around Metro Manila, The Original Pares Mami House has been offering the quintessential noodle soup since 1989. They are known to offer one of the best quality beef pares in the city, serving tasty and affordable house specialties.
The restaurant is a two-story carinderia-style dining place with numerous seating options. Apart from beef pares mami, diners can also try their rice toppings, pancit, pork sisig, seafood and meat dishes, and more. Price ranges from P65 to P115 per order.
They allow dine-in as of writing and accept online delivery. You can send your orders via Facebook Messenger.

DC Pares
Located in the green city of Pasig, DC Pares offers affordable beef pares mami that is guaranteed tender, pure, and authentic. Each order costs P85 only and you can pair it with egg, garlic rice, and chili sauce.
They also have combo meals available on the menu featuring a combination of cheesedog with rice and egg, and you can choose whether you want to add chicken, pork chop, beef tapa, longganisa, spam, and tocino.
Nestled in the prominent road of Chino Roces in Makati City, Pares Point The Original is also regarded as having one of the best beef pares mami in Metro Manila open for indoor and al fresco dining.
The restaurant has more than 20 beef pares-centric dishes which cost around P56 to P280. Satiate your hunger with classic silog meals, bagnet meals, non-meat dishes, sizzling ulam, and pulutan (snacks) paired with beer.
Pares Retiro
One of the most popular paresan in Metro Manila is Pares Retiro that opened its first-ever branch in Quezon City. At present, Pares Retiro has several branches throughout the country including Laguna, Pampanga, Dagupan, and Abra.
Their signature hot beef pares mami is best paired with fried rice and chili sauce and costs P187 to P193 only. Pares Retiro is also known for their “heavenly standards” of Filipino cuisine featuring pancit, sizzling sisig, lechon kawali, kare-kare, and desserts like turon de leche, saba con yelo, and halo-halo.
Pares To Go is well-known in San Juan City for their large servings of beef pares mami with a twist! Serving 100% pure beef with bone marrow, you’ll probably ask for extra rice especially during gloomy weather. They offer deliveries in and out of the San Juan area.

SouthPares
South peeps probably enjoy all the items on the menu offered by this paresan located in Poblacion, Muntinlupa, beside Southerside Montessori School. SouthPares beef pares can be paired with tumbong/mata/utak soup, bone marrow, sizzling plate, and chichabu (chicaron bulaklak). Price ranges from P40 to P80.

Only a few years ago, social media was awash in people sharing their baked goods made from scratch. Many indeed turned to baking during those times, which provided a kind of sanctuary and stress relief when most of us were cooped up in our homes.
Fast forward to post-pandemic, and some are still kneading and whisking away, while others have even turned their hobby into a passion. This is the reason IDIM DIY Bakery was brought into the Philippines, seeing how many Filipinos have become curious about the cooking method. It made sense that a Do-It-Yourself bakery would be a unique and exciting thing to bring into the local market.
IDIM, which stands for “I Did It Myself,” is an international brand established in Taiwan over twelve years ago. Today, they’re the first and leading DIY Bakery in Asia, with several outposts in countries like China, Macau, and Vietnam. The out-of-the-box bakery concept landed in Manila in 2022 with the opening of their first store in SM Megamall. As expected, it was a hit and was quickly followed by store openings in SM North Edsa, Ayala Malls Manila Bay, SM City Sta. Mesa, and SM Mall of Asia — which is set to open in two months!

The Beat Manila got to attend the opening of their newest store in SM City Sta. Mesa last June 20, and we couldn’t resist the opportunity to roll up our sleeves and take part in the experience to see firsthand whether IDIM DIY Bakery’s promise that “anyone can bake” truly holds up.
DIY Baking Experience Walkthrough
Step 1: Choose Your Confection

Stepping into their studio, you’ll be presented with a DIY Menu that has all their offerings from the decorative and classic cakes, fillings, and pastries. They have a bunch of decorative designs like colorful unicorn and rainbow cakes, to whimsical character cakes complete with adorable toppers! They’re available in six-inchone-tier (P1,199)or two-tier (P1,599) sizes, and can be worked on by two people. You will also need to choose a cake base, which can either be Chocolate Moist or Classic, and decide on the filling, which could be chocolate, caramel, strawberry, or blueberry.
Meanwhile, their classic cake delights include a range of fan-favorite flavors such as Red Velvet, Cheesecakes, Chocolate Oreo, Black Forest, and Strawberry Shortcake. Prices range from P899 to P1,399, depending on flavor, size, and design.
If you’re not big on cakes, you can also go for pastries, such as Bear Madeleins (P1,099), M&M’s Cookies (P1,099), S’mores Brownies (P1,149), and Mini Donut Macarons (P1,149).
Customers are given two hours to bake these goodies from scratch. Each menu item is also labeled with difficulty levels so you’ll know exactly what you’re getting into. However, regardless of the level, IDIM DIY Bakery guarantees that anyone can accomplish a baking session with their easy-to-follow instructions and accessible stations.
We decided to go for the decorative Rainbow Cake, because #PRIDE, and the bunny and rainbow toppers were too cute not to go for!
Step 2: Prepare Your Ingredients

After choosing your cake, you’ll be given wristbands and a tablet. Your tablet is basically your baking JARVIS, and will guide you through the baking process, step by step.
Before starting, head over to their washing station to get your hands cleaned. Hooks are available under each table for your bags, but there are also lockers available for use. Afterwards, you can grab an apron and return to your designated table to start.
The first step is to prep the ingredients, which can be found in the ingredients station on one side of the studio. One thing we noticed at this station is that all items are organized in such a way that they’re easy to spot. Each item is also clearly labeled, color-coded, and listed on the tablet, so you won’t have any difficulty finding the things you need. IDIM DIY bakery also prides itself on providing customers with premium ingredients, with most of them imported from their partners in Taiwan. If you look into the refrigerator, you can still see the brands of some of the items, proving that they’re very transparent, and guaranteeing that each cake or pastry will be made from the best ingredients.

Apart from the products, you’ll also find complete sets of baking tools and equipment such as mixing bowls, spatulas, weighing scales, and timers. Everything is neatly arranged, so it’s not hard to believe that anyone without baking experience or who hasn't spent that much time in a kitchen can do everything on their own. It’s like being in a life-sized play kitchen!

Should you need some assistance or clarification with certain instructions, their staff, who are all trained chefs, are ready to help.
Step 3: Let’s Bake!

After measuring and gathering all the ingredients onto your tray, it’s time to mix them all up! On one side of the studio are rows of high-quality electronic mixers. Now, they may look intimidating at first glance, but when in doubt, simply look down. By down, we mean at the helpful step-by-step instruction labels on the table, which teach you how to operate the kitchen device.
Along with the tablet guide, you’ll be instructed on how to incorporate each ingredient, how fast the mixer should be, and for how long you should mix it. A general rule is not to mix them all at once. If the written instructions still have you scratching your heads like we experienced a couple of times, there are visual versions available in the form of video tutorials on the tablet that are quite helpful and cleared our confusion instantly.
While mixing, you’ll also be asked to gather your baking trays and cake molds, which can be taken from their well-labeled equipment rack. Once you’ve taken the mix out of the bowl and into the molds, simply pop it into one of the ovens, set your timer, and let it bake!
Our cake mix only took around 17 minutes to bake, which gave us a lot of time to decorate!
Step 4: Time to Decorate!

We highly recommend preparing your frosting while your cakes cool down on the rack, especially if you’re creating an ambitious rainbow cake that requires at least six different frosting colors. Decorating creams can be found in the chillers, plastic piping bags on the equipment shelf, and food coloring in the ingredients station.
At the decorating station, you’ll find several cake turntables where you can pile up your cakes. The tablet tells you how to cream, stack, and repeat. We decided to go for a caramel-filled chocolate cake, so in between stacking, we got to pipe a generous amount of caramel, so this was the part where things got a little bit sticky and messy. But it’s all part of the fun!
After approximately fifteen minutes of trusting the process, our rainbow cake was ready for its final touches. Depending on your design choice, toppers are packed in little plastic bags under the station’s table. The rainbow cake included about four toppers plus sprinkles.
Step 5: Pose with Your Cake
Once you’re done, it’s time to show off your beautiful cake creations to the world! Take lots of snaps of your cake at your table or pose by one of their photo spots in the store. Afterwards, one of the staff can pack up your cake for you to take home, wrapped like a present with a ribbon.

For someone who doesn’t have much experience in baking, we have to say that IDIM DIY Bakery is the perfect place to start your baking journey, as it’s a great way to familiarize yourself with the process and the equipment. Baking requires a lot of tools and ingredients, so it’s convenient to have a place where you can try them out first and learn the ropes — all for the cost of buying a regular cake from a store.
10/10 would recommend trying with family and friends. You won’t only come out of it having fun, but also with a delicious confection to go!

Step into MGallery Admiral Hotel Manila’s lobby and spot a floor-to-ceiling bookcase. One particular section swings open – no password, just curiosity – revealing a dark corner where Ruby Wong beckons her guests to an elevator or staircase.
A good speakeasy provokes a mild sense of rule-breaking, and Ruby Wong’s Godown nails it from the start.
We chose the staircase lit by an eclectic mix of paper lanterns overhead and faux cobblestones below. A cast-iron “manhole” cover stamped “Ruby Wong’s Godown Noodle Alley & Bar Spectacular” hints that you’re about to leave Manila and emerge into old-school Kowloon.

Upon your descent you’re greeted by an unassuming noodle shop; strewn across the room are Ming-style tall chairs, antique vases, and red-luck ornaments as the kitchen peers beyond a glass window panel. A faint smell of broth drifts in the air, but it doesn’t linger.
As you continue further, you’ll find yourself in the bar, which lures you deeper into its dim corners and plush seats, each area made to feel like the best in house.
Soft music offers just enough volume to set the vibe and mask conversations, but still low enough to allow intimate gossip and group discussions. You’ll find low seats that can fit small groups with tables at the sides for larger gatherings, while more discreet pockets in the corners of the bar offer privacy for four to six-tops.

World Cocktail Months (yes, plural) is MGallery Hotel Collection’s annual tribute to mixology innovation.
This year, the brand tapped French lifestyle house Maison Sarah Lavoine to design an exclusive line of glassware and Citadelle Gin for a limited-edition line of cocktails. These cocktails are available at MGallery Hotels until Aug. 31, 2025, including Ruby Wong's.

At Ruby Wong’s, each limited-edition cocktail comes with a “Bites Pairing” designed to either echo or contradict them, costing P700 (alcoholic) or P500 (non-alcoholic).
Timeless Negroni x Manchego Pommes Fondant

We first reached for a classic, Timeless Negroni, and we were impressed by Ruby's layered reinterpretation of the cocktail bar mainstay. While Citadelle Gin’s juniper-forward profile sets the foundation, the pineapple-infused Campari introduces a tropical bitterness that is a welcome surprise but doesn’t overwhelm. The vermouth adds depth without flattening the citrus lift. Overall, it’s a well-balanced drink that will not disappoint Negroni lovers. But those who are not used to its bitter, herbal notes may find this an acquired taste.
As for its bite pairing, think of another bar classic: fries. But consider the Manchego Pommes Fondant as a mature, sophisticated take. Instead of plain, deep-fried potatoes, these are seared, braised, and baked – resulting in a crisp crust with a soft, fluffy interior. Flavor-wise, the decadent fattiness from the potatoes was offset by the sharp, salty, and buttery Manchego shavings on top. When consumed alongside the Negroni, the Pommes Fondant absorbed the bitter edges of the cocktail, succeeding in providing an interesting contrast. The fattiness tempered the bite of Negroni, while amplifying its complex profile at the same time.
For those seeking an elevated take on classics, this pairing will not let you down. It’s familiar but still holds a hint of mystery and surprise, much like the atmosphere of Ruby Wong’s.
Evergreen x Yuzu Wasabi Chicken

The most refreshing of the lot, Evergreen uses Kaffir lime-infused premium Flor de Caña rum and green mango cordial to mimic acidity without over-relying on citrus to capture attention. With the Giffard elderflower lending subtle floral notes of rose and a hint of lychee, the drink seamlessly integrates all elements – no burn, just a steady hum. It’s a great starter cocktail, especially if you want to effectively clear the lasting flavors of your last meal, to be replaced with an herbal, floral mix. These notes flirt with your senses, from the nose to the palate, catching on your tongue just long enough to leave you longing for another sip.
Lightly battered and perfectly crisp, the Yuzu Wasabi Chicken calls back to the cocktail’s citrus flavor but packs a light punch to balance the scales. The yuzu’s floral and sweet brightness mirrors the lime and herby flavor of the cocktail, while the wasabi mayo adds a little jolt, enough to cut the oiliness but still restrained. Fortunately, fried chicken is a forgiving vehicle for such bright flavors, so it still ends up as a safe and comforting but in no way ordinary choice on the menu.
This pairing is built on alignment: citrus to citrus, crisp to crisp.
Honey 75 x Salad de Crevettes

Texturally, Honey 75 is one of the most sophisticated cocktails in the lineup. Thanks to the olive oil fat-washing of the Citadelle gin, the mouthfeel is rounded and plush, coating the palate without being greasy. The faintly briny taste and honey syrup combine to form a sweet-tart flavor profile, while the Pommery champagne turned the cocktail into an effervescent dessert. Make no mistake, however, beneath the sweet sparkle of this drink lurks a strength that will have you crawling out of Ruby Wong’s if not taken seriously. But this one is a guaranteed crowd favorite as the creaminess persists throughout the tasting experience, making it an easy drink to consume and love.
The Salad de Crevettes acts as a saline counterpoint: prawns lightly dressed in citrus and garnished with a generous dollop of caviar. The subtle but ocean brininess of this dish balanced the sweet, creamy cocktail as they both competed for undivided attention. The fat-washed gin lingers, then the sea-forward taste of the Salad de Crevettes coats the tongue in succession, especially as the caviar pearls unravel. That is, until you take another sip of the Honey 75 – and the battle goes on.
This pairing revels in opposition, for those who favor a contrasting pairing rather than one that echoes.
Crystal Diva x Smoked Salmon Croquettes

One of the bolder cocktails in the mix, Crystal Diva is, quite simply, a diva that takes no prisoners. The Tio Pepe Fino Sherry and Citadelle Gin combine in a frenzied alcoholic storm that almost dares you if you can consume more. It's accented by jasmine-lemongrass cordial that adds floral notes minus the sweetness, but these are rendered barely noticeable as they go up against the formidable flavors of the two alcohols. This bone-dry cocktail is a wine-lover’s cocktail – high in acidity and packs a punch with a phenolic finish that lingers on the upper palate. In other words: it’s intense. Order it if you like your cocktails loud, proud, and unconcerned with subtlety.
Crystal Diva's pairing, the Smoked Salmon Croquettes, are crunchy on the outside, velvety on the inside, with a mild smokiness that doesn’t dominate. The fattiness counteracts the sherry’s dryness, providing mouth-coating relief between sips. It’s a classic fat-cutting-dryness match, but it’s not quite harmonious as the cocktail overshadows the dish a bit. Still, this dish cushions the blows from the Crystal Diva, ensuring you can walk away from Ruby Wong’s with your wits about you.
Smoke & Mirrors x Tako-Yaki

This showstopping cocktail is a complex mix that had us sitting back and nodding contentedly.
Smoke & Mirrors boasts a mix of Talisker 10 and Jameson whiskey, sweetened and aromatized with clarified lemon, Dionysus vanilla, and lavender bitters, then smoked under an edible jelly film. Peaty, sweet, floral, and citric – each note is sequenced deliberately and arrives in layers. The body is medium-heavy, and the finish is long and warming. It’s like crashing a vintage Jaguar into a lemon orchard before coming to a halt in a lavender field, a hint of smoke emerging from your car as you walk away – the progression of citrus, smoke, and florals lingering on your palate.
The Tako-Yaki, which is actually grilled octopus and leeks yakitori, is charred just enough to carry a Maillard depth while it pairs well with the sweet grilled leeks. Simple and straightforward, the dish leaves little to the imagination. Compared to the complex drink, the Tako-Yaki felt a little anticlimactic. Still, the simplicity has its place, resetting the palate after each sip.
Final Thoughts
Ruby Wong’s Godown is no ordinary bar. Entering the speakeasy and settling into its mysterious, alluring atmosphere is already an experience on its own.
Each cocktail tells a story and every pairing has its audience, whether you’re a classics lover reaching for the Timeless Negroni, a low-key drinker who appreciates the refreshing Evergreen, someone who wants a cocktail with a complex story like the Smoke & Mirrors, a sweet-seeker falling in love with the Honey 75, or a diva who finds yourself magnetically drawn to the Crystal Diva.
MGallery's World Cocktail Months end on Aug. 31, 2025, but this experience is definitely just a start. Ruby Wong, after all, still holds plenty of secrets up her sleeve, and you’re sure to discover them with every visit.

There is the Brotkorb(breadbasket), an essential centerpiece of oven-fresh German breads, Laugenbezel (Bavarian-style soft pretzels), Räucherlachs (German-style smoked salmon), and Wiesen jause (German cold cuts and cheeses). To refresh your palate a bit, you can choose from Münchner Wurstsalat (Munich-style sausage salad), Kartoffelsalat(German potato salad), or Krautsalad(White cabbage salad). These dishes create a hearty and authentic spread for everyone to enjoy.

Then comes a table full of bratwurst! From Weisswurst, a Munich-style poached veal and pork sausage, Rostbratwurst (grilled coarse pork sausage), and Frankfurter with potato salad and Kaiser roll.
For the hauptgang(main course), there is the Wiesn platte (Bavarian meat platter), consisting of crispy pork knuckle, pork schnitzel, meat loaf, rotisserie chicken, sausage, mashed potatoes, sauerkraut, and onion jus. Delve into a hearty Rindsgulasch (beef goulash), with braised beef ragout, served with bread dumplings. Plus, an authentic and delicious Hausgemachte Käse Spätzle (homemade cheese spätzle), oozing with mountain cheese and crispy onions.
Wash down your meal with beer and sweeten things up with classic delights such as the Apfelstrudel(classic apple strudel), Kaiserschmarrn (shredded caramelized pancake), and Schwarzwälder Kirschtorte (black forest gateau).

This summer, the bingsu craze is getting an exciting upgrade, with the launch of Café Koreano by Bonchon!
