Here, they indulge in the world's finest cigars and a selection of drinks prepared by head mixologist Faye Fernando.

The Beat Asia had the chance to chat with Baccarat Room and Bar's Faye Fernando, where she told us about her journey into the industry, which is nothing short of inspiring.

Originally, Faye aspired to become a chef, but she soon realized the fierce competition in the culinary industry. So, she adapted by taking up a job as a cashier, then jumped as a bartender at Curator Coffee and Cocktails where her curiosity for cocktails was kindled.

Fast forward to today, Faye has been at the helm of Baccarat Room and Bar for over a year, boasting a remarkable 11-year experience in the mixology industry.

Along this fascinating journey, she learned that friendly competition, self-study, and self-appreciation are the secrets to growing and fitting in the cocktail industry.

How do you go about creating new and innovative cocktails? Do you have a creative process or source of inspiration?

When it comes to innovative cocktails, I usually use the traditional process first before using some machines. I love studying flavors, and it doesn't matter whether it takes time; the more time I have, the more knowledge I will get. After using [the] old way, that's when I will use machines and stuff and compare which is the best flavor and decide from that.

What aspect of your profession brings you the greatest satisfaction or joy? Conversely, what would you say is the most challenging part?

My greatest satisfaction and joy were how I shared the flavor experience through my experimentation and ideas. I also love talking [to] and meeting different guests and turning them into friends and family. I would also say that the challenging part was the trial-and-error on the experimentation side, which took a lot of time for me, but I still consider it part of learning.

What are some of your favorite cocktails to create, and why?

Personally, I love simple or classic cocktails because of their very balanced flavors. In terms of what I love to make for my guests, it depends on what type of drink they want, and proceed by asking [them] some questions [or their preferences].

Are there any unique or unusual ingredients you enjoy using in your cocktails?

I don't really have any specific ingredients, but I'm into local. I love to mix local flavors and play around with their unique essence.

How do you balance the art and science of mixology in your creations, such as measuring and experimenting with flavors?

For me, mixology leans more toward art with a touch of science. I must say that although we have similar knowledge, execution techniques, ratios, and procedures, what truly makes us different from each other is our unique artistic perspectives.

Are there any challenges you've faced as a female mixologist in a traditionally male-dominated industry?

None. As I’ve said, for the past 11 years working in the industry, I witnessed how it began here in the Philippines. I fell in love and got inspired to become a bartender or mixologist and most of my colleagues are male, especially my mentor/boss at the first bar I worked with. Our industry is very fun and friendly.

What advice would you give to someone looking to start a career in mixology, especially to other women in the field?

So far, a lot of women are getting into mixology, and most of the schools also support the industry. It's very different now, and I know everyone understands that mixing cocktail drinks is like cooking food, but instead of fire, we use ice. If they really love mixing flavors, don't rush, and enjoy every bite, flavor, and experience.
