With chilli crab's mildly spicy yet sweet and savoury flavour, each order will make you want to wipe the sauce clean from your plate with the mantou (fluffy bun) that comes with it.

Roland Restaurant

From a seaside stall to becoming a household seafood name, Roland Restaurant is dubbed as the “creator of chilli crab” after Madam Cher Yam Tian — the mother of current owner Roland Lim — invented the recipe in 1956. They have stayed true to this original recipe until now, combining the natural sweetness of Sri Lankan crustaceans with a tangy and spicy gravy that makes diners in Singapore keep coming back for more. Along with your chilli crab order, you might also want to get their Black Sauce Prawns, Deep Fried Scallop Wrapped with Yam, Crispy Baby Squids, and Specialty Fried Rice.

Established in 1987, JUMBO Seafood is an award-winning restaurant with a reputation for “serving only the freshest seafood cooked to perfection.” From their flagship store in East Coast Seafood Centre to their multiple branches islandwide and all over Asia, they have turned into one of the big-name brands that offer the best chilli crabs in Singapore.

Diners can choose among three live crabs — Alaskan Crab, Mud Crab, and Dungeness Crab — cooked in different styles, such as Award-Winning Chilli Crab, Signature Black Pepper Crab, and Stir Fried with Golden Salted Egg Crab. Alliance Seafood

If you’ve watched the Hollywood movie “Crazy Rich Asians,” you probably have an idea where to find this humble yet widely popular hawker stall. Rachel Chu (played by Constance Wu) was taken to Newton Circus Food Centre, a tourist food spot that is home to Alliance Seafood and other amazing eats, upon landing in the city-state. Although she declared that satay was “the best food in Singapore,” rest assured that Alliance Seafood is worth visiting for a chilli crab. Why? They’re a MICHELIN Bib Gourmand awardee for years since 2016, and that says a lot.

Red House Seafood

Established in 1976, Red House Seafood is one of the oldest seafood restaurants in Singapore offering a palette of flavours that reflect the city-state’s cultural diversity.

Diners can choose between an Alaskan King Crab and a Sri Lankan Mud Crab with their preferred cooking style: Red House Chilli Crab, Stir-Fried with Garlic and Dried Chilli, and Wok-Fried and Tossed in Black or White Pepper. While you’re at it, we recommend pairing your order with their steamed or fried mantou. You can also try their Takesumi Chilli Crab Bun, which is a charcoal bun filled with chilli crab sauce and crab meat chunks. It’s a pretty smart combination if you ask us!

HolyCrab

Do you ever just crave something good to eat, visit a restaurant, and say “HolyCrab!” because there are giant crab legs outside? You’re not alone. This dining establishment located in Singapore’s cultural district is the lovechild of chef Elton’s passion for eating and cooking.

Awesome exteriors (and interiors) aside, what’s great about HolyCrab is you’re spoilt for choice. You can order their Sri Lankan crabs in different flavours, such as Singapore Chilli Crab, Devil’s, oOoOtak, and Balsamic, along with their land and sea protein choices. Hong Kong’s cult-favorite neighborhood café Elephant Grounds has finally opened its first flagship outlets in Singapore and Jakarta!

Founded in 2013, Elephant Grounds is Leading Nation Hospitality Group’s flagship café brand, known for its sophisticated blend of specialty coffee with a relaxed, community-driven atmosphere. Starting off as a small kiosk in Sheung Wan, the brand has grown to be one of Hong Kong’s most celebrated café names, renowned for its special in-house roasted beans, Japanese-inspired menus, and artisanal pastries.

Uno Jang of Jigger & Pony Opens Newest Bar Concept, Korean-inspired 'BOP'

If you love visiting Jigger & Pony but want to try something new, Uno Jang has something just right up your alley — in the heart of Singapore’s “Korea Town.”

BOP (Bartenders of Pony), a Korean-inspired cocktail dining bar by Jigger & Pony Group officially opened on Jan. 31, 2026, at 76 Tras Street, just steps away from its sister bar Jigger & Pony.

Blending craft cocktails with bold Korean flavors, this new space is designed for relaxed evenings, shared plates, and long conversations. BOP aims to balance refined mixology with a warm, welcoming atmosphere that’ll easily transport visitors to Itaewon and Hongdae.

The bar is led by head bartender Uno Jang, together with Berry Lim, Basil Wong, Eric Chang, Max Gan, and Brandon Gan, bringing together a team known for its generous and convivial approach to guests.

BOP’s cocktail menu is centered around Korean pop culture and drinking rituals, highlighting Korean traditional spirits like soju, cheongjuand makgeolli. Expect drinks inspired by buldak noodles, Dalgona iced coffee, and even a perilla garden, for S$23 per cocktail.

The food also shares the same concept, which was formulated in collaboration with Culinary Class Wars Season 1 alum Chef Jason Oh. Visitors can expect Korean favorites such as Kimchi Pork Mandu, Crispy Fried Chicken, and Seafood Pancake, which complement the beverages perfectly.

BOP is located on 76 Tras Street, Singapore, and is now accepting reservations through their website. The bar will be open from 6 PM to 1 AM from Tuesdays to Thursdays, and Sundays, and from 6 PM to 2 AM from Fridays to Saturdays. Happy hours run daily from 6 PM to 7:30 PM.

Chatterbox Welcomes the Year of the Horse with 2026 Cookie Collection

Chatterbox has unveiled its 2026 Lunar New Year merchandise line, launching a new festive cookie collection alongside a limited-edition tableware line created in collaboration with SupeMama Singapore and local artist Messymsxi.

Aptly timed for the Year of the Horse, the collections will be available for purchase from early January at all Chatterbox locations.

Now in its third year, the collaboration introduces the “Island Bloom Collection,” a series of collector-style bone China pieces inspired by Singapore’s landscapes. The plateware is adorned with richly illustrated botanicals, native birds, and the lush greenery that shape the city’s landscapes, priced from S$22 to S$36, with the full set retailing at S$108.

A brand-new year brings in another one filled with prosperity and luck!

McDonald’s Singapore is welcoming the Lunar New Year with the return of its Prosperity menu, alongside a few new festive additions that are oh so huat!

From Jan. 22, 2026, the seasonal menu brings back popular favorites, including the Prosperity Beef Burger, Prosperity Chicken Burger, and Prosperity Twister Fries. Joining the lineup this year is the new Fortune Prosperity Beef Burger with Egg and its chicken variation, offering its iconic peppery Prosperity sauce and sandwiched with a golden egg.

The festive lineup also introduces a few new limited-time treats! McDonald’s Members will get early access starting Jan. 26, 2026, at 3 PM, with a full set available for redemption at 2,688 points via the McDonald’s App!

Martell Welcomes the Year of the Horse with Limited Editions and a Pop Up

This Lunar New Year, Martell is galloping into the Year of the Horse with limited edition designs of the Martell Cordon Bleu and Martell VSOP, alongside a festive pop-up experience titled “The House of Martell” at ION Orchard’s B4 Indoor Atrium from February 5 to 12, 2026.

Inspired by the Chinese New Year tradition of house-visiting (拜年 bài nián), “The House of Martell” pop up opens its doors as a warm welcoming home and invites guests into a curated journey of art, culture, and craftsmanship—from sculptural installations and calligraphy keepsakes to exclusive tastings and treats. Entry to the pop up is complimentary and is open from 11 AM to 9:30 PM.

The limited-edition bottles are designed in collaboration with globally celebrated Chinese artist He Datian, whose expressive works and fluid brushwork capture the spirit and vitality of the horse, appearing across the Martell Cordon Bleu and Martell VSOP bottles. Rendered in vibrant red and electric blue with refined gold accents, the designs offer a contemporary yet auspicious expression for festive gifting.

At the pop up, visitors can explore The Martell Cellar, where Martell’s most exceptional creations and rarest exceptions are housed. A highlight is the L’Or de Jean Martell Zodiac Edition – Assemblage du Cheval, limited to just 500 bottles worldwide, and is released annually in celebration of the zodiac animal of the year. Past editions of the rare expression can also be seen at the pop-up.

The St. Regis Singapore Reopens, Unveiling Three Exquisite Dining Concepts

The St. Regis Singapore, long celebrated as the city’s best address, has finally reopened, ushering in a new chapter for the House of Astor.

Following its extensive, multi-phase renovation, which included the reimagining of its guestrooms, suites, signature restaurants and bar, and event spaces, the luxury landmark has unveiled three new conceptsSophia, The St. Regis Bar, and The Tea Room—each reflecting the brand’s legendary heritage through a modern lens.

Leading the charge is Sophia, a new Italian restaurant helmed by Chef de Cuisine Angelo Sergio, showcasing beloved recipes from 11 regions of Italy with a contemporary refinement. Highlights include artisanal dishes like Tagliatelle Atavi e Porcini and Bistecca alla Florentina, as well as house tiramisu based on a family recipe. Weekends bring a vibrant Sunday Brunch, featuring a mozzarella bar, gelato cart, Tiramisu cart, and free-flowing R de Ruinart Brut Champagne, accompanied by a live jazz band.

At St. Regis Bar, Head Bartender Kelvin Saquilayan debuts the bar’s new “Time After Timecocktail menu, inspired by New York’s past decades with a Singaporean twist. Signature creations include the Merlion Sling, Disco-tea-que, and The Straits Mary—a local reinvention of the St. Regis Bloody Mary infused with Bak Kwa bourbon and assorted spices.

Completing the trio is The Tea Room, a light-filled destination redefining the St. Regis Afternoon tea ritual first introduced by Mrs. Caroline Astor in 19th-century New York. Drawing inspiration from the Singapore Botanic Gardens, guests can expect tableside tea service from a tea sommelier, with a scone trolley carrying an assortment of unlimited scones, assorted jams, and clotted cream, and exquisite pastries and viennoiseries from the adjacent Patisserie.

Altogether, the three concepts anchor a new culinary chapter for The St. Regis Singapore, one that honors the brand’s heritage while welcoming modern sophistication.

Odette Reopens, Ushering a New Season of Modern French Dining in Singapore

French restaurant Odette has reopened at the National Gallery Singapore, unveiling a new chapter that both honors its first decade and embraces the future. Still rooted in modern French cuisine, the restaurant now leans towards a lighter, more layered expression shaped by the Asian influences that have formed Chef-Owner Julien Royer’s culinary journey.

The refreshed menu revisits Odette’s signatures through a more contemporary lens. Standouts include the Hokkaido Botan Ebi with yuzu-kosho, dashi jelly, and caviar, alongside Crab Contrast, where a Norwegian king crab is served two ways — including a subtle nod to the Singaporean chili crab.

Beloved classics also remain, like the Kampot Pepper Crusted Pigeon, prepared with peppercorns sourced from Kampot Jewels in Cambodia, and the Jeju Abalone and Foie Gras Duo, served in a yuzu-inflected pork broth.

Desserts by Pastry Chef Louisa Lim continue the narrative, from the bright and citrus-forward LOULOU Lemon to a refined Hazelnut Délice inspired by the traditional Mont Blanc with Piedmont hazelnuts at the reins. Complementing the food is an expanded beverage menu developed by Beverage Specialist Haikel Bin Abdullah, offering seasonal, alcohol-free pairings designed with the same care as its wine pairings.

The Oolong was designed to pair with the Hokkaido Botan Ebi, making for a lighter, more elegant pair that is still nuanced in complexity. For the main course, a beautiful ruby-hued Beetroot is intricately prepared with thinly sliced beetroot, which is roasted, cooled, and blended with koji, and later infused with thyme and pink peppercorn for two days.

To complement the warmth of the Jeju Abalone & Foie Gras Duo, the Lapsang has a beautifully rendered Chinese black tea with kombucha, imbued with ginger and lemongrass for a spicy, yet refreshing taste.

The reopening also reveals an updated interior by longtime collaborators Sacha Leong and Dawn Ng, introducing warmer tones, tactile materials, and a more intimate ambiance that honors the building’s historic character.

“This new season of Odette is about deepening what we’ve always believed in—respect for produce, provenance, and the people who bring it to life,” shared Chef Julien. “Today, we’re not starting over; we’re building on those foundations to create an experience that feels more intimate, more thoughtful, and more connected than ever before. Above all, every choice is anchored by the restaurant’s core mission of creating meaningful human connections and making guests feel cared for.”

Odette’s new season signals a new and confident step forward — one that stays true to its roots while embracing a more thoughtful and expressive future.

Yes, Chef! Zor Tan of Born Restaurant on Heritage, Growth, and Identity

Chef Zor Tan’s cooking is personal in the truest sense. Rooted in his Hokkien heritage, his food reflects a life lived through flavor, memory, and movement.

“My earliest memories are from a small kitchen where food was how my family expressed love. I remember the heat of the wok, the smell of soy and garlic, and my parents cooking without ever measuring. Those moments made food feel emotional to me, not just technical, and that became the foundation of my cooking,” the chef shared with The Beat Asia.

At his Michelin-starred restaurant, Born, Chef Zor brings this to the forefront through his “Circle of Life” philosophy, where each dish tells a story drawn from his own journey. Currently ranked among Asia’s Best Restaurants, Born feels less like a destination restaurant and more like an ongoing conversation between the chef, his past, and the present.

“It started with wanting my food to be honest,” he said. “Instead of creating dishes for trends, I began creating dishes from memory. Over time, those memories formed a narrative, each dish representing a chapter of my life, the lessons I learned, and the people who shaped me.”

Apart from taking inspiration from his personal memories and Hokkien ancestry, Chef Zor’s cooking was also shaped by years spent working across different countries and kitchens. Born and raised in Malaysia, the chef moved to Singapore at age 17, where he first worked as a conductor operator at an electronics factory. But it was when he started working in a Japanese chain restaurant that his culinary journey began.

He studied at SHATEC Singapore and immediately began working at Restaurant Jaan after graduation, where he met his mentor Chef Andre Chiang. When his mentor launched Restaurant Andre, Chef Zor followed suit, where he rose steadily through the ranks. It was also while working here that the opportunity to join a culinary program in Spain came, where he got to work in world-class kitchens, including restaurants DiverXO and El Cellar de Can Roca.

Also adding to his impressive resume is becoming the Executive Chef of Restaurant Raw in Taipei and Sichuan Moon in Macau, where he was able to expand his knowledge on Sichuan cooking. When asked if there was a chapter in his culinary story that had the biggest influence on his cooking style, he replied, “There wasn’t one big moment. Cooking was simply where I felt most grounded. When I saw how a dish could make someone feel something, I realized it was a language I wanted to speak for the rest of my life.”

“Working overseas shaped me. I learned discipline, precision, and humility, but also the importance of identity. Being far from home made my heritage even more meaningful, and that tension between global technique and personal memory defines how I cook today.”

His skills and experiences gave birth to a unique brand of contemporary cuisine, which is highlighted in his first restaurant located at the heart of Singapore’s vibrant dining scene. Chef Zor describes “contemporary” as something that is all about clarity, quoting, “It’s knowing who you are and cooking with intention. It’s less about pushing boundaries for the sake of it, and more about expressing identity with honesty.”

According to the restaurant’s website, Born serves contemporary cuisine of cross-cultural techniques that are imbued with French and Chinese influences. It’s an intricate design of flavors, one Chef Zor balances incredibly well. When asked how he’s able to balance heritage with innovation, heritage and is own personals storytelling, he shared, “I begin with a memory or a flavor from my roots. Technique brings structure, and creativity refines the expression. When heritage and innovation feel seamless, that’s when the storytelling works.”

Chef Zor’s extensive experience in the kitchen hasn’t dulled his curiosity. If anything, it continues to fuel his desire to learn and evolve. Recently, he brought that spirit of exploration to Manila with a special kitchen takeover at Red Lantern in Solaire, where he unveiled an eight-course menu inspired by his Hokkien heritage and shaped by the many culinary traditions he has encountered throughout his career.

A takeover brings a sense of adventure,” he said. “New ingredients, new tools, new team. It pushes me out of my routine. That energy reminds me of why I love this craft.”

The menu was both personal and progressive, weaving familiar flavors with refined techniques and unexpected touches. Guest were able to enjoy dishes such as the Kanpachi with Ginger and Watermelon Radish, which was made as a tribute to the Chinese New Year raw fish toss; the Crisp Fried Bao with Wagyu and Oyster, a reinterpretation of the traditional Haobing oyster cake through Spanish culinary influence; and the King CrabRisotto, enriched with Talangka and paired with Fish Maw.

When asked how he went about weaving local Filipino elements into the course, he replied, “I approached it with respect. I didn’t want to force fusion; I wanted the Filipino elements to feel naturally integrated into my story. I looked for flavors that resonated with memories from my own upbringing.”

Chef Zor also mentioned taba ng talangka, pili nuts, and calamansi as some of the ingredients that have captured his attention for their personality, and he would love to explore them further.

As for what lies ahead, Chef Zor hopes to keep doing what excites him most: discovering new cuisines, exploring unfamiliar ingredients, and learning along the way. He shared that he’s eager to work more closely with other chefs, especially those who cook with a strong sense of identity. For him, the most meaningful collaborations are with people who, like him, value culture, purpose, and storytelling on the plate. With Born already landing at No. 25 on Asia’s 50 Best Restaurants in 2024, we asked Chef Zor which chapter of his “Circle of Life” he feels he’s in right now. He reflected:

“I’m in a chapter of growth and gratitude. The awards validate the team’s work, but they also remind me to stay grounded and keep evolving. There’s still a lot I want to express. The awards are meaningful because they reflect the commitment of the entire team. My advice to young chefs: stay patient, know your voice, and cook with intention. When you stay true to your identity, recognition will follow naturally.”
