These Hong Kong Restaurants are Recognized Among World’s Best by the Oscars of Fine Dining

Four entries from Hong Kong graced William Reed Business Media’s World's Best Restaurants, a prestigious ranking that gathers the cream of the crop in global culinary. Said to be the Oscars of fine dining, the list takes into account a panel of more than 1,000 culinary experts to come up with a coveted line-up that is now considered a “barometer of global gastronomic trends.”
This is the first World’s Best Restaurants list since the pandemic, when the COVID-19 infection forced restaurants to shut doors either temporarily or for good.
Despite its name, the World's 50 Best Restaurants lists 100 establishments; only the first 50 were part of the main ceremony held in Antwerp, Belgium on Oct. 5, 2021.
For this article, we considered all entries based in Hong Kong: The Chairman (10), Vea (71), Belon (88), and Amber (100). From soft-lit interiors that scream elegance but also exclusivity to refined dishes built on tradition, here’s what to expect from these fine dining restaurants.
The Chairman
Ranked 41st in 2019, Cantonese restaurant The Chairman climbed its way up to become the 10th best restaurant in the world. Chef Kwok Keung Tung helms the kitchen, overseeing everything from the locally sourced fresh produce to whipping up sauces from scratch. 50 Best describes The Chairman’s cooking style as “built on tradition” that will transport you through “2,000 years of Cantonese culinary history.”
Menu recommendations include razor clams steamed with aged lemon and mixed herbs (HK$138); king prawns cooked in fish and rice broth (HK$158); and steamed fresh flowery crab with aged ShaoXing wine, fragrant chicken oil, and flat rice noodles (market price).

Vea
Vea blends Chinese influences with French culinary techniques to come up with a menu meant for modern gourmands. The restaurant has 25 counter seats lined up along the open kitchen, where bartenders and chefs can be seen mixing and matching a myriad of flavours.
Diners can choose between a six- and eight-course menu, ranging from HK$1,880 to HK$2,280 plus service charge. Aveyron lamb, Kristal caviar, and Yamaguchi black abalone are just some of the restaurant’s signature dishes.

Belon
A neo-Parisian restaurant in Hong Kong’s upscale SoHo district, Belon sources seasonal ingredients from Hong Kong and abroad to serve up meticulously prepared dishes. Chef Matthew Kirkley heads the kitchen, bringing with him decades of experience from some of the world’s finest kitchens including Coi in San Francisco and L20 in Chicago.

Amber
French cuisine with a local twist continues to be the central theme among the best restaurants from Hong Kong as Amber—a modern fine dining perched on the seventh floor of The Landmark Mandarin Oriental—mirrors its Parisian counterparts in cooking techniques and ambiance. Aside from full-course meals, which are available in vegetarian version, Amber has a bevy of wine offerings sourced from abroad.
