Chilli Fagara, a leading Sichuanese mainstay in Soho's bustling foodie scene, has attracted crowds to experience the fiery, numbing, and authentic central Chinese fare for over 17 years. The dim-lit venue transports diners on a trip north to experience the decadent sights and tingling tastes of Sichuan cuisine.

Opening in 2005 on Gough Street, Chilli Fagara operates in a cosy, fiery venue on Old Bailey Street. For 11 years, the venue has garnered critical acclaim with recommendations and awards from the Michelin Guide.

Chongqing-born-and-raised chef Chan Kai-ying, alongside daughter Tracy, endeavour to deliver a Sichuanese cuisine challenging the perceptions of Hong Kongers, with innovations in flavours, healthy eating, and adapting with the times.




The Excellent, Fiery Executive Lunch Menu

Chilli Fagara’s latest culinary offering is the restaurant’s signature and chef-curated Executive Lunch Menu (HK$348 pp), an elegant Sichuan feast of Chef Chan’s signature plates, seasonal seafood and meats, and blends of snappy, fiery Sichuanese peppers.

Available daily from 11:30 AM to 2:30 PM and 4 to 6 PM, I sat down to treat my tastebuds to a considerate exploration of the Sichuan food concepts of Ma (numbing), La (burning), and Tang (neutral) flavours.

The debut of my four-course lunch at Chilli Fagara begun with the Ma La Tang Samplers, an introductory starter exposing the range of spice levels employed in the lunch menu and heat routinely used in Sichuan cuisine. The appetisers include the Pork & Vegetable Dumplings (Ma), Shredded Chicken in Spicy Peanut Sauce (La), and Karana Lettuce Wraps (Tang).

The sampler dish aptly prepares you for the introduction of Chilli Fagara-style Sichuan spice in the menu, whilst kickstarting your tastebuds into the action. The plant-based Karana meat, made from jackfruit, is an addictive snack that elicits a nice herbal taste with cumin-infused ‘meat’, onions, and carrots. The fiery shredded chicken is snappy with each bite, blending the sweet, pickled cabbage, nuttiness of the peanut sauce, and a nice grainy texture with the chicken. The dumpling finale bites at your tongue, in preparation for the real fire coming in the later courses!

Onto the second course, I dug my spoon deep into Chill Fagara’s Signature Beef Soup, a briny, fiery broth that spits fire with grindy Sichuanese peppercorn, and the Chicken and Matsutake Soup, silky smooth consommé with chunky bits of boiled chicken and mushroom.

Gamey and salty flavours are strong with the beef soup, which first introduces a pleasant onion aftertaste, followed by a strong kick to the throat with the numbing la. Conversely, the chicken soup is smooth and rich with a salty chicken flavour; the mushrooms, however, are small enough that they do not add to the taste but bring colour to the pot.

For mains, I was treated to three spice-enriched Chilli Fagara classics, namely the Sizzling Beef Slices, which could rival almost any Chinese-styled beef slice dish I have tasted before this. The dish is whipped out of the kitchen with smoke billowing from the red-hot metal plate cooking diced leeks, onions, garlic, and beef chuck.

Wow. The beef is utterly tender. With each bite, you are welcomed with a bursting of sweetness from the garlic soya sauce gravy and the saltiness of the beef. The sliced Chinese leek and onion helps balance the creamy gravy with bit of bitterness. I finished the plate clean and scooped up the remaining gravy soaking in the white rice; it was heavenly.

My next foray in raw Sichuan fire was the Spice-Infused Broth with Fresh Mushrooms, a tall bowl of shiitake and maitake mushrooms, garlic, bean sprouts, leeks, potato noodles, and cloves dunked in a hot chilli-peppercorn broth.

With the mushrooms and glass noodles boiled with the beefy broth, each bite of vegetables or slurp of noodles oozes out the spicy juices of a mixture of mala pepper, vinegar, ginger, toasted sesame, and roasted garlic – a melange of salty treats ready to attack your mouth. I would caution that this dish is not for the faint-hearted as the peppercorns within can light up your throat and nose, in a good way.

The final hit of my lunch experience at Chilli Fagara was the Fragrant Crispy Fried Sole Fish, a buttery yet blazing fried fish plate, garnished with fresh Sichuan peppercorn, and dusted heavily with garlic and dried mala pepper.

The chef team at Chilli Fagara did excellent on this dish. The cornmeal chewy batter is tough to the bite, but when cracked, it reveals a gooey, soft, and salty inside that warms the mouth, with a numbing punch that trails all along the mouth and nasal canal. I would advise to take each bite slowly and eat alongside white rice to cool one’s mouth.




Verdict

Chilli Fagara satiates ones craving for numbing, burning, and earthy flavours in a classic Soho eatery that delivers on the sights and tastes of southwestern Sichuan cuisine. The Executive Lunch Menu delivers a hearty experience for exploring the ma, la, and tang flavours that best encapsulate the passion of Chef Chan and Sichuanese-styled cooking.

To garner a whole experience at Hong Kong’s Michelin recommended Sichuan eatery, I recommend selecting the Signature Beef Soup, Sizzling Beef Slices, and the Stir-fried Mock Chicken for a modern take on a Sichuanese classic. If you can handle your spice, choose the spicey mushroom broth; but if you want an age-old taste of Chilli Fagara, choose their Emperor’s Prawns.

Founded by award-winning mixologists Antonio Lai and Samuel Kwok, the bar has made its mark by blending popular cocktails with inventive flair.

With an ethos centered on the concept of "creating unity with opposites," their cocktail menu presents 16 drinks that playfully represent Antonia and Samuel's contrasting styles and personalities. 

“We have always had the shared goal of reintroducing timeless cocktails to a broader audience, especially in a market that has been trending toward ingenious styles,” said Samuel.

Highlights include the unexpected Bombay Mary (HK$150), spiced with butter chicken seasoning and Exotic City Gin, and its bold counterpart Miss Gazpacho (HK$140), featuring Wasabi Vodka and Kimchi

Or sip on Soya Sour (HK$150), made with Tofu, Pisco, and Green Cardamom, alongside its sweet, photogenic twin Scoop Me Up, served in a cone-shaped glass with a bubble of fruity foam.

Another standout is the Son of Pimm’s (HK$130) with Mountain Begonia, Lychee, Strawberry & Shiso, Cucumber and its show-stopping pair, Selling Seashell (HK$130), a shell-shaped creation bursting with flavor from a combination of Pimm’s No.1, Tomato Water, Strawberry Caviar, and Cucumber Air.

Dessert lovers, meanwhile, will delight in the LA Socialites vs PB&J showdown — bourbon-based, wildly different, but equally indulgent.

The month-long anniversary series kicks off with East Meets West: Dessert Pairing Cocktails on July 10 (7 to 10 PM), featuring four decadent dessert-and-drink duos created with renowned chefs Justin Lee (JL Dessert Bar, Seoul) and Fabio Bardi (Tozzo). Guests can preview the pairings from July 1 to 13, 2025.

Then on July 16 (8 to 11 PM), bar stars Hiroyasu Kayama (Bar BenFiddich, Tokyo) and Seven Yi (LE ROOM, Taipei) take the stage for an exclusive Masters of Mixology guest shift.

Capping off the month on July 31 is the Tea vs Coffee Series, a four-cocktail face-off between premium tea blends (led by Nana Chan of Plantation) and refined coffee extractions (courtesy of EN Coffee’s Jeremy Yeung and Jason Chan). Impatient? Sneak peeks of the cocktails will be served at The Opposites from July 21 to 31, 2025.

In August, the bar will debut a refreshed cocktail menu spotlighting elevated takes on well-known favorites such as the Espresso Martini, Paloma, and Sidecar — each filtered through the bar’s signature lens of contrast.

The Porch redefines Korean food as a shared language, emphasizing on the simplicity and warmth of backyard family meals that are effortless and abundant. 

Their menu introduces house special: the National OG Chicken (HKD$128) hand torn tableside by The Porch's culinary team, a classic 1960s street icon where vendors fried hens into crispy gold for laborers, holding a special place in Korean food culture that represent the simpler times of sharing and gathering.

Another 1950s to 60s staple is soulful Korean BBQ. The Porch introduces a delectable twist on Seoul’s classic backyard food culture with the K-BBQ Kochi Skewers (HKD$18 -HKD$68), which were born in port cities like Busan, where dockworkers first threaded scraps of meat and seafood onto bamboo sticks. This tradition has now evolved into an irresistible culinary experience. 

The Porch presents premium-quality options like beef, pork, lamb, and chicken that are perfect for mixing and matching, all at attractive affordable prices.

This summer, Black Sheep is turning up the Italian charm in Hong Kong with Stazione Novella’s vibrant ‘Summer of Spritz’ pop-up, running now until Sept. 6, 2025. 

Located on the corner of Soho’s Staunton and Aberdeen Streets and channeling the effortless glamor of an Italian piazza, the pop-up will be a sun-drenched party hub where locals and visitors alike can gather for Aperitivo hours and lively DJ sets, all centered around Italy's quintessential summer beverage, the Aperol Spritz!

Messina is joining the excitement by offering Maritozzi (HK$48) — soft Italian brioche buns stuffed with rotating Messina gelato flavors, ideal for beating the summer heat.

The festivities kick into high gear with monthly DJ parties on the first and third Saturdays at Stazione Novella, turning the space into an open-air dance floor where guests can sway to upbeat tunes with a spritz in hand.

Ella at The Trilogythe jazz live music venue named after the Queen of Jazz, Ella Fitzgerald, has launched a vibrant new cocktail menu: Louisiana Gold.

The brainchild of Singular Concepts’ Beverage Manager, Maikal Gurung, Louisiana Gold pays tribute to the spirit of New Orleans, where the sounds of Dixieland and the flavors of Creole culture and Southern tradition converge. 

Louisiana Gold features refreshing cocktails such as Bayou Breeze, made with 15-year-old rum, cucumber, and watermelon. Another highlight is Pistachio & Gold, a bourbon infused with pistachio, arnibal (Filipino caramel), lemon juice, and pineapple foam. 

Their signature cocktails, "Legends and Lore," offer fun twists on classics. The Classic Creole is a smoky, herb-infused margarita with charred corn, cilantro, and agave. The Delta Julep kicks up the Southern staple with peanut butter-washed vodka, cognac, and fresh strawberry.

Tung Chung Kitchen’s “Treasures of Home Kong Buffet” will return for its second edition from June 30 to Sept. 28, 2025, elevating the dining experience and introducing more timeless local cuisine.

Another standout is the HK-style Bagged Noodles, which brings back fond childhood memories for many. Guests can choose their preferred ingredients and sauces by mixing them in a plastic bag and slurping with a skewer stick like in the good old days. 

One noteworthy item is the nostalgic and increasingly rare treat – Mochi served with flavourful sesame and peanut fillings from Kwan Hong Bakery, which truly evokes delightful memories. Street food lovers should not miss the ubiquitous Cheung Fun (Rice Noodle Rolls), drizzled with sweet soy sauce, hoi sin sauce, and sesame seeds, which is packed with authentic Hong Kong flavours and goes particularly well with siu mai.
