Restaurant snapshot: PICA PICA takes the classic experience of tapas dining to Hong Kong, importing the bravado, gumption, and initiative to innovate on age-old Spanish dishes for a hungry Hong Kong foodie community. Executive Chef Edgar Sanuy takes direction for the restaurant’s F&B offerings.
Vibe and venue: Stood proudly at the edge of Sheung Wan, the venue design of PICA PICA is brash with its mysterious façade, building on the allure of what magic comes from within, and oozes magic inside, where an industrial open kitchen breathes energy into the dining room.
Value for time & money: A lunch meal ordered a la carte between two people or more averages in the high HK$400’s, comprising of bite-size tapas plates that can number based on your appetite, patience to wait for bulkier paella bowls, or time to leave work. Dishes are prepared and served fresh.
Menu highlights: Starting off, the Pintxo Gilda makes for a palate cleanser that energises the mouth and you for the meal, Jamon de Teruel is a cold cut worth ordering, Watermelon gazpacho is a dish you will regret not ordering, so too with the Baby gem salad. Wagyu steak tartare and Pica Pica paella are mains said to be signature.
What we tasted: We ordered Pintxo Gilda (HK$25), Tomato bread with Arbequina olive oil (HK$33), Cured fish assortment (HK$195), Watermelon gazpacho, cucumber sorbet (HK$66), Baby gem salad (HK$82), Grilled foie gras “Collverd” (HK$168), Braised “Carrilleras” beef cheek (HK$168), Basque Burnt Cheesecake (HK$78).
Hits & misses: The pintxo gilda is an acidic refreshener needed in introducing the salty meal, a big hit. The gazpacho too was a guilty pleasure with honey notes tempering the tongue. For misses, the beef cheek could have used additional salt to drive home umami flavours.
The midday must-have: The Pica Pica paella surf & turf brags of notable leading status for dishes found inside the restaurant. It’s where PICA PICA strives and it’s what Spanish food is internationally known for: mixes of the sea and land with salty notes of the country’s fields.
Final verdict: I am sold on the PICA PICA dream. The restaurant brings traditional national dishes into a modern light, awakening your tongue with bold flavours. It’s the perfect spot for lunch dates, work meetings, or friendly catchups.

What makes food so delicious? For some, it’s a balanced palate of vibrant and unique flavors. For others, it’s nostalgia: the love of food that brings back warmth and memories. For Pak Loh Chiu Chow, the iconic family-run Hong Kong restaurant, it’s both.
Known for its nostalgic and creative take on Chiu Chow cuisine, Pak Loh Chiu Chow has been in operation for nearly sixty years now. It was founded in 1967 by sailor-cum-entrepreneur Pui Sai Hung, who later passed it down to his eldest son, Pui Jun Kuen, also known as Dai Siu.
While the restaurant's main branch had originally shut its doors in 2024, it has recently been revived and has since reopened to carry on its legacy at Hysan Avenue. “The landlord of the original site reached out to us, the third-generation heirs, about taking up the space again,” shared Joanne Pui, daughter of Dai Siu, and granddaughter of Pui Sai Hung. “Although we all had different career aspirations, [we decided to take on the opportunity] because we are all closely connected with the restaurant; it has great sentimental value to us.”
As Hong Kongers will know, Pak Loh Chiu Chow brings an innovative take to Chiu Chow cuisine, a type of fare from the Chiushan region in the Eastern part of Guangdong, China. Because Chiushan is close to the coastline, Chiu Chow cuisine is rich in seafood. They also serve a unique delicacy made from lion-head goose, a species of bird found in China.
“Chiu Chow cuisine is also renowned for their distinctive use of pickled ingredients as condiments and the vast variety of different sauces that pair with specific dishes,” shares Joanne. “Signature dishes include Steamed Lobsterserved with Tangerine Jam, Braised Chicken with Pu-ning Soybean sauce and Soy Goose served with Garlic Vinegar sauce.”
According to Joanne, Chiu Chow cuisine is deeply embedded into the city’s culinary culture. The cuisine was first introduced to Hong Kong by immigrants from Chiushan who popularized it through roadside food stalls called “da-laang.” However, during the city’s economic boom in the 60s and 70s, high-end Chiu Chow restaurants rose to prominence, alongside wealthy Hong Kongers such as Lim Por Yen, Li Ka Shing, and Chua Lam, all of whom share Chiu Chow ancestry.
“It's become an indispensable taste memory for many Hongkongers growing up,” Joanne explained.

Joanne reminisces about her memories of the restaurant growing up, noting that her grandfather, who laid the foundations for the business, was a very hardworking man. “Since childhood, we remember seeing our grandfather sitting at his usual table at the restaurant every day, watching over all the operations, even after he retired,” she recalled.
When the restaurant was passed down to Dai Siu, Pak Loh Chiu Chow began infusing more creativity into their otherwise traditional menu. “Dai Siu was a charismatic man who loved food and socializing,” Joanne smiled. “Under his management, the restaurant received recognition from the Michelin Guide from 2016 until 2021 [the year Dai Siu passed away].”

Today, Joanne works with other members of her family to keep the names of their forefathers alive. Of course, that’s not to say that working with family has been easy. Even the closest relationships are tested in a professional setting.
“We each have a different role in the business,” shared Joanne. “But one of the major challenges working in a family business, especially when it involves working in a cross-generational context, was the communication barrier and the very different perspectives [that each person has in running a] restaurant.”
Fortunately, the Pui family has found that their shared vision and the ability to compromise work well during conflict resolution. Working alongside long-term staff members who have been with them for years has also been helpful.
“We greatly value their wisdom and experience, treating them as extended family. Their input is always taken into consideration in our decision-making process,” Joanne shared.

In 2025, customers can revisit Pak Loh Chiu Chow on Hysan Avenue for a taste of familiar but unique dining. There are reinvigorated favorites such as Dai Siu’sSmoked Eel, now made with French (instead of Dutch) eel and prepared with black pepper and olive oil. There is also a fusion Chiu Chow-Style Braised Fish Maw and Seafood in Soup inspired by the Thai heritage of Dai Siu’s wife. The new restaurant also proudly presents a Braised Giant Grouper with Pepper in a Pot dish that enhances the fish’s flavors with aged wine, garlic shallots, ginger, and scallions.
“With our restaurant's long history, many of our customers who used to visit with their parents are now bringing their own children back to dine with us,” Joanne shared enthusiastically. “It brings us immense joy when we see this tradition pass down to the next generation and hope this will continue when our restaurant is passed down to our children.”

Cooking good food can be difficult. It takes years of practice, plenty of love, and much creativity to come up with delicious recipes. So who can one turn to in times of culinary need? A simple and reliable answer would be: cookbooks. A wide and varied industry in the world of publishing, cookbooks cater to many different styles and cuisines. There are microwave cookbooks, cookbooks for kids, volumes and editions that focus on vegan food, cakes, and soups. Among the new releases is Nina Hospitality’s “Hotel Chef Secrets.”
A popular hotel group in Hong Kong, Nina Hospitality opens its doors to guests staying in areas such as Causeway Bay, Wan Chai, and Mongkok to name a few. Like many other hotels, they are favored for delicious in-house restaurants such as the I-O-N buffet, Ah Yung Kitchen, and Chinese eatery, RU. To commemorate the hard work and creativity of their masters, Nina Hospitality has since released a special cookbook dedicated to sharing this goodness with guests and customers.

“Hotel Chef Secrets” contains 35 heartfelt recipes developed by seven of their talented chefs. Among these are Chef Simon Wong, Chef Wai Leung Lam, Chef Ray Louie, Chef Kelvin Ng, Chef Kenny Kwok, Chef Andy Lam, and Chef Ming Kam. There are recipes suited for every meal, from a Tuna Niçoise Salad starter to an abalone main course and even a Chocolate Lava Cake for dessert.
“Each chef brings a unique perspective and specialty to the table, allowing us to showcase a diverse array of flavors and techniques,” shared Simon Manning, Managing Director of Nina Hospitality.
Known for their resilience, hard work, and passion, professional chefs jump through hoops and sacrifice long hours for the happiness of their guests. Professional chefs are required to balance creativity with operational efficiency; they must navigate complex food safety regulations and various minute details that could make or break an experience.
“Having a written record of these recipes allows others to learn from and be inspired by their work,” noted Simon. “Ultimately, documenting these recipes helps create a lasting appreciation for the artistry of all our chefs.”

But do those who purchase the book need any extraordinary kitchen skills in order to recreate these recipes? According to Simon, not at all!
“Cooking is actually pretty simple! It's like a treasure map — as long as you can read the directions and have a willingness to learn, you're already halfway there,” he said.
This newly published cookbook promises to make complicated-sounding recipes easy to master. Simon assured us that even novice chefs can try these for themselves, noting that the book provides clear guidance and tips to help cooks at every level. “While some recipes may seem intricate at first glance, we’ve designed them with home cooks in mind,” he added.
On his part, Simon has been learning to master the Double-boiled Fish Maw Soup with Almond Cream and the 9-year Lily Bulb recipe. This popular Chinese soup is known to be nutrient-dense and rich in collagen. While it may sound complicated to those who have yet to encounter it, the journey to perfecting it is both fun, rewarding, and – perhaps surprisingly – not as difficult as it sounds.
“It’s fun to experience the quest for a perfect fish maw. I also love sipping on a warm soup that's full of healthy collagen because trust me, my skin could totally use a collagen boost!” Simon laughed.

The managing director also advised novice chefs to relax and have fun while trying these recipes out. “Cooking should be an adventure, not a stress-fest,” he said. “If you ever find yourself in a recipe bind without a specific ingredient, don't panic! Just channel your inner chef and remember that most ingredients can be swapped out for something else.”
For example, oyster sauce can be skipped or swapped over soy sauce. Plenty of herbs can also be interchangeable. “Just make sure that whatever you swap isn’t the main ingredient, of course,” he added.
Ultimately, Hotel Chef Secrets offers diners a glimpse into a handful of chefs’ unique artistry. Through this, Nina Hospitality hopes to encourage chefs of all levels to partake in creating these extraordinary dishes.
“The joy of cooking is all about learning and enjoying the process, so whether you’re whipping up a comforting meal or attempting a more ambitious dish, the experience can be truly rewarding!” Simon emphasized.
