French Fine Dining Restaurant Feuille Opens With A Sustainable, Local Twist

Michelin-starred French chef David Toutain has collaborated with ZS Hospitality Group to bring an innovatively branded restaurant – Feuille.
Located on Wellington Street, you’ll find that grains, seeds, fruits, and vegetables take the spotlight, making the menu both sustainable and delicate. As an owner and a chef from two-star Michelin-starred restaurant in Paris, Toutain wanted to build a vegetable-focused fine-dining experience for food-lovers and showcase his culinary inspirations by preparing the most seasonal local produce with French cooking techniques.
This year, Toutain is bringing his sustainable and environmental-friendly dining experience to Hong Kong by sourcing his ingredients from local farmers. Having the restaurant with the French name “Feuille,” meaning “Leaf,” the restaurant is taking on a plant-innovated menu which aims to leave no carbon footprint. The menu is creatively designed to reflect the life cycle of a plant, starting with appetizers of grains and seeds, then entrees with leaves, stems and roots, before concluding with a delicate dessert featuring fruits and flowers.
There are two menus to choose from: The Terroir menu which features dishes with meat, and the Vegetal menu that is fully plant-based and vegetarian-friendly.
Highlights of the menus include a Quinoa and Sweet Potato mix topped with Thyme, and a spicy Lobster with Zucchini topped with a scent of Mint. Don’t miss the dessert with locally planted Tomato, Strawberry, and Longan. The tasting menu will be wrapped up by a trio of bite-sized desserts, with Miso Meringue, a Hazelnut Chocolate, and Cauliflower with Coconut, which reflects the plant’s life cycle once again.
