JW Marriott Khao Lak Resort & Spa unveils Southeast Asia's first fully circular beachfront experiential tasting menu, Sown & Reborn, a six-course dining experience like no other.
Offered at the resort’s newly redesigned Drift Beach Bar & Grill, one of Khao Lak's top culinary destinations, this event highlights the beauty of upcycled ingredients, sustainably sourced local seafood, and organic farm produce from the resort's very own JW Garden.
Curated by Cluster Director ofCulinary, Silvano Amolini and Chef de Cuisine Khun Eak, the Sown & Reborn experience begins with an optional pre-dinner guided tour of the resort’s27-acre garden, where one of the resort’s chefs will explain the sustainable produce used in their meal.

Guests will be welcomed by variety of canapés, guided by a resort chef for a tasting session featuring delightful circular and farm-fresh appetizers. Additionally, they can enjoy yoga and wellness sessions, birdwatching tours, and other garden activities.
There will be an introduction by Executive Chef Silvano,where he will dive into how he repurposes food leftovers, such as potato skins, discarded coconuts, and watermelon husks.
The first course of the six-course tasting menu is the JW Garden Duck Egg crispy poached duck egg paired with repurposed potato espuma and fresh morning glory, followed by the savory Umami Power and Prawns, a vegetable-powered broth similar to tom yum soup.

Guests will be treated to flavors that are as surprising as they are delicious. The third course shows off JW Garden’s seasonal bounty in JW Garden Chicken Egg with smoked eggshells tagliatelle and vegan Bolognese, featuring smoked egg shell tagliatelle made from recycled bread crusts.
The fourth course marries the snapper and grouper, sourced from a natural farm in Rawai, South Phuket, which handles the fish with chemical-free practices and an all-insect diet.

As the evening unfolds, dessert takes center stage with innovative sweets crafted from NipaPalmsugar, part of the resort’s reforestation program that supports local communities. And perfectly complementing your meal, a selection of thoughtfully crafted signature cocktails, made using sustainable or upcycled ingredients, are available to complete your experience.
Beyond The Sown & Reborn initiative, sustainability touches every aspect of the resort’s operations. In just three months this year, JW Marriott Khao Lak has converted over 8.5 tons of food waste into compost, repurposed 4 tons of food scrapsinto circular pasta and jams, and even transformed coffee ground leftovers into fuel and fertilizer.

We ordered a selection of dishes based on the chef’s recommendation, all of which impressed us with their gastronomic approach and refined plating, complemented by a refreshing twist.
We started off with their new Chutneys set (THB500), which includes a collection of green chili chutney, baingan chokha, roasted beets, aamshoto, and roasted tomato. Beautifully plated and visually appealing, the chutney plate also features miniature naan and fried lotus root on the side. The naan was a delightful addition, allowing us to dip it into each chutney and enjoy the various flavors. The tangy-sweet aamshoto and the mildly buttery baingan chokha were particularly favorites, offering a unique taste that really stood out.

One of the standout dishes is Dahi Ke Kebab(THB390)— an unusual and snowy twist on vegetarian North Indian kebabs. These kebabs are deep-fried, with a crispy exterior wrapped in kataifi, a pastry-like dough, and filled with spiced yogurt and a parsley cream topped with yogurt snow. Witnessing the staff serve the dish, as they drizzle the frozen yogurt snow over the kebabs, is a visual delight. When you take a bite, the satisfying crunch of the kataifi gives way to the icy, mildly sweet yogurt filling, creating an exquisite melting sensation in your mouth. The yogurt snow adds a sweet touch that perfectly balances the mildly spiced filling, and a dollop of mango chutney elevates the experience — truly a chef's kiss. This must-order dish serves as a perfect appetizer.

Kofta Saag(THB490) pairs beautifully with Chilli Cheese Naan(THB180), creating a delightful blend of mild spice and robust flavor. Think crispy fried vegetable dumplings crafted from fresh paneer and vibrant veggies, all enveloped in luscious spinach gravy and wrapped in gooey, cheesy naan. Each bite is a comforting embrace, making this dish a warm and satisfying choice for a main course.

Shergill Sling: A cocktail named after modern polo star Simian Shergill. This remarkable fusion of premium gin, luscious pomegranate, zesty lemon, and aromatic basil creates a vibrant concoction that perfectly embodies the dynamic spirit of contemporary Indian polo.
Shamshare Negroni:A bold reinvention of the classic Negroni, this cocktail features Indian gin and coffee-infused Campari, inspired by Shamsher Ali's boldness on the field. The fancy bubble on top makes it a perfect moment to pull out your smartphone and capture the bartender adding the finishing touch.
What We Liked
The Dahi Ke Kabab is an absolute culinary delight that will enchant your taste buds — you’re guaranteed to fall in love at first bite. This version of dahi ke kabab is a rare find, setting it apart from anything you’ve tasted elsewhere. The cheese naan is irresistibly delicious, offering a soft and warm texture with an indulgent cheesy blend that will leave you craving more.
For drinks, the Shergill Sling is a smooth, refreshing cocktail that pairs perfectly with all the dishes.
What We Didn’t Like
While the miniature naan is a unique addition to the chutney set, it could be softer and chewier. It's better to choose the 3-chutney set instead of the 5-chutney set, as the latter tends to overwhelm the palate with competing flavors.

There's no doubt that the Dahi Ke Kabab(THB390)is a must-order dish. Additionally, the Kheema Pav(THB390) is highly recommended by the chef and is another tempting option at Jharokha. It features soft butter pav paired with richly spiced minced lamb, elegantly topped with confit yolk and a splash of burnt lemon.
For sharing, consider the Laal Maas(THB1,250), which consists of Australian lamb shank cooked in Mathania chili paste. This rich, mouth-watering curry is sure to satisfy your cravings. Alternatively, you can try the Charcoal Fish (THB1,150), which is a whole sea bass rubbed with masala, roasted over charcoal, and served with asparagus, burnt lime, pickled pears, and roasted tomato chutney.
When it comes to desserts, the Kesar Faloodais the ideal choice to satisfy your sweet tooth. This delightful dish features rose kulfi with saffron rabdi foam and vermicelli, making it not only refreshing but also the perfect way to cleanse your palate and indulge in a heavenly blend of sweet and nutty flavors.

LUZ Bangkok, the crown jewel of Thailand’s first INNSiDE by Meliá hotel, has introduced a “Viva la Fiesta” experience complete with guest DJs, live percussionists, a giant paellera, and extensive views of Bangkok’s skyline by night.
“Viva la Fiesta,” meaning “long live the party” in Spanish, is staged every Wednesday from 7 PM until late at the authentic Spanish tapas bar on INNSiDE by Meliá Bangkok Sukhumvit’s 33rd and 34th floors.

Spanish Chef de Cuisine, Madrid-born Juan Ignacio Garcia Racionero, who has honed his craft in some of Spain’s top kitchens, has curated a menu celebrating the famed gastronomy of Spain.
His dishes range from the Pulpo a Feira, comprised of octopus with potatoes and spicy paprika, and Chanquetes Fritos, made with fried fish, fried eggs, and roasted peppers, toCroquetas de Ternera y Tartar de Tuna, featuring oxtail croquettes paired with fresh tuna tartare. Other highlights include the Plato de Jamón, an Iberian ham served with tomato-rubbed bread, and a Tortilla de Patata (Spanish omelette) with truffle and Idiazabal cheese.
Chef Racionero’s giant pan ofpaella features rotating flavors such as seafood, pork, chicken, and vegetables, including mushrooms and Padrón peppers.
These tapas are accompanied by quintessential cocktails such as the Agua de Valencia, concocted with freshly squeezed orange juice, cava, vodka, and gin, and the Spanish favorite Sangria.
Apart from the live percussionists, guest DJs spin Spanish-modern house and tribal beats weekly. An optional dress code of red, black, or gold is part of the event’s playful Spanish night theme, with the best-dressed guest in red and black to be given a complimentary signature drink.
