Simon Rogan, a world-renowned British chef totalling five MICHELIN Stars and two MICHELIN Green Stars, is hosting a unique two-day dining pop-up to showcase the next generation of hospitality professionals.

Simon’s project Academy by Simon Rogan aims to equip culinary students with a unique hands-on learning experience, providing them with necessary hospitality skills and reigniting passion for the industry after a tough period of understaffing in the field.

To celebrate this year's graduating class of apprentices from the Academy, a special takeover will take place at Hotel ICON's Bistro 1979. Danny Ho from the PolyU School of Hotel and Tourism Management, along with Head Chef of Roganic Hong Kong Ashley Salmon, have been working closely with the students to organize this event in Hong Kong.

"I'm very excited to collaborate with the best hospitality school and Hotel ICON in Hong Kong,” says Chef Rogan, “a special two-night takeover dinner in a student-run training restaurant is simply the best way to celebrate the end of their training whilst allowing them to see how we apply our farm-to-fork philosophy in this bustling city."

For HK$680 per person (plus service charge), the stunning eight-course celebration menu will feature dishes created by Academy by Simon Rogan apprentices as well as Hotel ICON interns from PolyU SHTM. An optional non-alcoholic beverage pairing is available at an additional HK$280 per person.

Expect to tuck into delicious items like Crabmeat with salmon roe pai tee, citrus zests, ricotta cheese; Cured salmon with whipped cod's roe, avocado and wasabi sorbet; Aged short rib served with creamed potato, kimchi, horseradish, and salsify; Rhubarb poached in blood orange with caramelized white chocolate cream, Lake District woodruff and pistachio; amongst many other innovative dishes designed by these young chefs.
