Delish Eats: Cierto, An Intimate Pub Serving European Fares
Restaurant story: Owned by entrepreneur Andrew Masigan, Cierto was launched inside the newly opened Parqal Mall in Aseana City late last year. Inspired by his travels to Europe, Masigan wanted to remind passionate foodies and travellers like himself of their own travels to the continent. Fast forward to today—Cierto is giving Filipinos and tourists alike a taste of Europe with its wide range of fares.
What’s the vibe and venue like: Nestled inside the up-and-coming destination Parqal Mall, Cierto offers an inviting atmosphere upon entrance with its intimate setting plus warm lighting, perfect for chill hangouts with friends and family. With a seating capacity of around 30, the resto-pub is adorned with comfortable stalls, including a long, plush couch, a four-seater booth, and a six-seater high table.
There are also eye-catching sculptures and portraits of cherubs spread across the venue, much like what one could see in typical diners in Europe. At the bar, there’s also a vast display of spirits and alcoholic drinks.
How much does it cost: For appetizers, Cierto’s menu starts at P255, while their main courses range from P695 to P1,360. Their deli sandwiches and pasta are priced in the medium range, from P425 to P975. Meanwhile, cocktails go for around P300 to P400, but they also serve spirits like gins, vodkas, tequilas, rums, and whiskeys by shot or bottle. There are also red and white wines, served by the glass or by the bottle. Their most expensive bottle, the Macallan 12 Years, is priced at P10,500.
What is the menu about: Crafted by Chef L.A. Cedeno, Cierto’s menu consists of dishes from various parts of Europe, including Italy, Spain, Greece, and even the staples of Romania, Ireland, and Austria. Despite being a new place, Cierto’s menu offers a wide variety of fares, from pasta and sandwiches to hearty mains and desserts. They also offer cocktails, blended whiskeys, gin and tonic varieties, and non-alcoholic bevvys, among others.
What did we try: Berenjena Crujiente (P285), Beef Salpicao (P675), Seafood Pasta Negra (P585), Reuben Sandwich (P785), Fresh Corned Beef & Cabbage (P785), Chicken Souvlaki with Rice Pilaf (P775), Basil Smash (P390), and Burnt Basque Cheesecake (P265).
Berenjena Crujiente: This is not your usual crispy eggplant dish. With its crunchy bite, this Spanish appetizer is the perfect bar chow for those who are in for a drink and are looking for a light snack. Elevating its flavor is the honey drizzled on top, creating a good balance of sweet and salty.
Beef Salpicao: A sizzling something is always great for us beer-loving Filipinos, and Cierto has Beef Salpicao for that. Served on a hot plate, this app is headlined by tender slices of heavily seasoned beef. Savory and easy to chew, this dish is best paired with beer or wine.
Seafood Pasta Negra: Topped with bits of shrimp, squid, and shellfish, this black-hued pasta is for seafood lovers. Without any hint of a fishy taste, this pasta is nothing short of delectable. With olives, capers, and cheese, this pasta introduces a medley of flavors that delight the palate.
Reuben Sandwich: The Reuben Sandwich is Cierto’s version of the well-loved pastrami sandwiches in Romania. With a hefty serving, this deli sandwich is great for sharing and will indeed satisfy your hunger. The best thing about this dish is the soft and airy bread, plus its pickled vegetables, all homemade by Cierto. The shredded beef filling, while boasting a melt-in-your-mouth texture, however, has quite an overpowering peppery taste.
Fresh Corned Beef & Cabbage: This American-Irish dish is usually served to commemorate St. Patrick’s Day in Ireland. If you’re looking for something simple yet hearty, this is the dish to order. What we loved about this menu item is its soft and tender meat, which is tasty even without dipping it in the sauce that comes with it. Pair it with fresh slices of cabbage and potatoes, and you will have yourself a comforting meal.
Chicken Souvlaki with Rice Pilaf: This dish hit all the marks—well, at least for us! Giving us a taste of fares from the streets of Greece, the Chicken Souvlaki with Rice Pilaf features skewered chicken chops, grilled with perfect heat. We loved how it had a smokey smack to it in addition to its flavorful marinade. It also goes really well with rice pilaf, infused with herbs and spices.
Basil Smash: Cierto has a versatile range of cocktails, but one of their best-sellers is Basil Smash. The bright green-hued drink is infused with crushed ice and basil, giving it a refreshing and minty taste. It also has a delightful citrus flavor, which is quite similar to the sweet and tangy dalandan, a beloved fruit among Filipinos. This cocktail is also quite light, making it a great option for those who don’t prefer strong liquors.
Burnt Basque Cheesecake: When it comes to European pastries, one cannot simply miss Basque, Spain’s Burnt Basque Cheesecake. Cierto’s version of this sweet treat is served without the crust, so you can fully enjoy the creamy and cheesy goodness of the cake. Topped with slices of fresh strawberries and strawberry jam, the dessert offers a balanced sweet and sour flavor.
What we liked: As people who prefer intimate get-togethers with loved ones, we loved how the resto-pub gave off a warm and homey vibe where groups could enjoy having conversations. From their interior to their well-executed food, Cierto is truly the place to visit to remind you of Europe, or at least transport you to its vibrant streets without actually going there.
What we didn’t like: Every item on the menu offers amazing flavors, but when it comes down to our preferences, we felt that the Reuben Sandwich could be improved with a less peppery taste to make it more delightful to bite into.
What you should order: Our best picks from the tasting menu are the Chicken Souvlaki with Rice Pilaf, Beef Salpicao, and Berenjena Crujiente. The Basil Smash cocktail is also a must-try, along with the Burnt Basque Cheesecake.
