Margo
Serving an “intimate brasserie-style modern European dining concept,” Margo whips up quintessential dishes made of top-tier ingredients that will earn the nod of meticulous gastronomes. Chef Mario Paecke, a former sous chef of Amber at Landmark Mandarin Oriental, helms Margo. This European-themed restaurant in Hong Kong recommends its croquettes, rainbow trout confit, and 12-month local tilapia. This Michelin-starred restaurant injects Asian elements into its European dining concept. Ornate mirrors, shield plaques, and chandeliers accentuate this European-themed restaurant in Hong Kong that first opened in 1969 before its transfer to its present location at Hyatt Regency. Must-haves include steak tartare, lobster thermidor, crêpes suzette, and lobster bisque. Hugo’s also boasts imported roasted lamb rack, U.S. beef ribs, and Australian wagyu. Whether it’s for the Renaissance ambiance or delectable dishes, trying out Hugo’s is worth a go.

Pazzi Isshokenmei
A fusion between Japanese and Italian fares, Pazzi Isshokenmei uses hand-picked ingredients in its kitchen creations. If you want to enjoy a drink or two, head over to the next-door invite-only bar for some cocktails.

Amber
