Hong Kong Demon Chef Alvin Leung Opens New Concept Cafe Bau in Wan Chai

Cafe Bau, a new farm-to-table, hybrid concept in Wan Chai, has opened for dinner service under the direction of celebrity, Michelin-starred ‘Demon Chef’, Alvin Leung.
In partnership with LUBUDS F&B Group, the restaurant will champion Hong Kong's locally-sourced ingredients to bring innovation to diners who wish to reduce their carbon footprint. Cafe Bau, as the name suggests, is inspired by the Bauhinia x Blakeana flower, a rare hybrid plant native to Hong Kong, and an icon of the city.
The dinner menu offers a delicate three-course option starting at HK$650 per person, or an exceptional seven-course tasting menu starting from HK$998 per person. All dishes are a thoughtful curation of the local flavours and ingredients by the dynamic culinary team.
On offer, the Salt Roasted Beetroot appetiser with Pat Chun Vinaigrette, Candied Walnuts and Charred Corn delivers a surprising east-west flavour explosion, while the Hand-cut Macaroni Cacio e Pepe with Preserved Clams and Crispy Chicken Wings impart a zesty, citrus-infused creamy sauce with fresh briny clams.
Grilled Squid follows with Spicy Shatian Pomelo Jam, Smoked Flounder Barley and Squid Ink Chips, integrating seafood and playful sweet, spicy, and smoky flavour profiles.
For main course, Catch of the Day uses locally sourced fish with various cooking methods to enhance the qualities of the meat, and Slow-cooked Oxen Brisket sourced from Hong Kong farms.
At the end of the meal, diners complete the journey with the Sugarcane Juice Jelly with Seasonal Fruit exclusive to the tasting menu, followed by the Signature Custard Tart with Calamansi Crème Fraîche, Almond Crumble of Caramel Sultanas to pay homage to Hong Kong's iconic egg tart.
