Whey & Upstairs Tasting Room Vietnam Unite for Two Michelin-Starred Nights

One memorable collaboration in Ho Chi Minh City last year clearly wasn't enough. This September, Michelin-starred Hong Kong restaurant Whey reunites with Chef Hiep Truong and his team from Vietnam's Upstairs Tasting Room for a two-night dining collaboration.
Taking place on Sept. 7 and 8, 2026, the exclusive dinner brings together the two one-MICHELIN-starred restaurants known for their thoughtful, ingredient-driven approach to Southeast Asian cuisine. Chef Hiep, whose modern Vietnamese tasting menus at Upstairs Tasting Room are rooted in heritage and local traditions, will join forces with Whey Founder Chef Barry Quek and Head Chef Keith Nathaniel Teo for a multi-course menu that explores the culinary connections between Vietnam and Singapore.


Expect a contemporary dining experience shaped by seasonal ingredients, regional flavors, and the distinct perspectives of both teams, with each course offering a fresh interpretation of Southeast Asia’s rich and diverse food culture through refined modern techniques.
