Celebrity Chef Fabrizio Ferrari Redefines Seafood Dining at Laurus Table

Resorts World Sentosa (RWS) just unveiled the flagship restaurant at The Laurus, a Luxury Collection Resort, to be headlined by Michelin-starred Chef and Netflix star Fabrizio Ferrari.
The Seoul-based Italian chef brings over 15 years of Michelin-starred experience to Laurus Table, where he serves up dishes inspired by the flavors of Italy’s Amalfi Coast and the fresh bounty of Singapore’s coastal waters. The menu is rooted in sustainability, featuring locally farmed seafood, organic regional produce, and herbs picked straight from the hotel’s garden.
More than just a restaurant, Laurus Table is an experience — complete with a state-of-the-art show kitchen and a beautifully designed 106-seater space that feels like a collector’s home, inviting guests to dine, connect, and savor every moment.

Hailing from Lecco, Italy, Chef Fabrizio Ferrari discovered his passion for food from his mother in the kitchen which led him to introduce innovative cooking techniques and a scientific approach in running his family restaurant. He earned his first Michelin star at just 28 years old for his restaurant Al Porticciolo 84, which has been holding the accolade for over 15 years.
The chef relocated to Seoul in 2019, where he owns and operates Fabrizio's Kitchen. His recent appearance on Netflix's “Culinary Class Wars” propelled him into the spotlight as a celebrity chef, while his YouTube channel showcases his Italian culinary skills and heritage alongside his exploration of Korean food culture, Michelin-quality dishes, and mukbang-style food reviews.
Restaurant Highlights
As the consultant chef at Laurus Table, Chef Fabrizio Ferrari has put together a menu inspired by the sun-soaked flavors of Italy’s Amalfi Coast. Using the freshest seasonal ingredients, his dishes bring a modern take on Mediterranean and European cuisine, shaped by his years cooking across Europe and South Korea. The result? Plates that are clean, elegant, and deeply rooted in tradition — yet infused with a multicultural flair that perfectly mirrors Singapore’s identity as a global dining hub.
Guests begin their culinary journey with Panzanella di Polpo, a traditional savory Panzella salad paired with a succulent, slow-cooked octopus. Then, savor the Branzino in Crosta Di Sale, Finocchietto e Limone, a whole sustainably farmed seabass baked in a sea salt crust with wild fennel and lemon.

Diners can also enjoy the chef’s signature dishes such as Scialatielli ai Frutti di Mare al Cartoccio, Scialatielli spaghetti pasta sautéed with sustainable seafood tossed in a rich seafood sauce and wrapped in foil, which is served table side; and the Mafaldine al Burro, Limone e Alic, where ribboned mafaldine pasta is mixed in with a creamy and tangy sauce of Amalfi lemon, Limoncello liqueur, Cetara anchovies, and fresh wild fennel. Together, these dishes bring the taste of Southern Italy to Singapore’s dining scene.

Beyond the plate, the chef also reinforces RWS’s commitment to responsible sourcing and environmental stewardship. The menu highlights fresh seafood from The Fish Farmer, a leading sustainable fish farm located near Singapore waters. This is then complemented by organic produce from regional growers and herbs from the hotel’s own herb garden, which features 18 varieties of herbs that are cultivated in organic wood planter boxes.
Additionally, Guests are invited to join immersive experiences that aim to deepen their connection with food, such as chef-led tastings, cultural storytelling sessions, and interactive cooking classes that start with a guided tour of the herb garden and end in a bespoke three-course meal prepared in Laurus Table’s private dining kitchen.
Breakfast at Laurus Table is served in a residential style, featuring international favorites served with house-baked breads, heritage condiments, farm-fresh herbs grown on-site, and sustainable local produce. Some of the must-try offerings include a bespoke Calamansi Curd Yoghurt which was created exclusively for the hotel by an artisan Singaporean producer specializing in cultured dairy.
