Chef Javier Gomez Barajas to Helm Rustico with New Autumnal Dishes
Spanish taverna Rustico announced that Valencia native chef Javier Gomez Barajas will helm its culinary offerings as head chef, bringing with him his reinterpretation of the restaurant’s menu with new autumnal dishes that champion Spain’s rustic culinary heritage.
Inspired by his mother's cooking and his own creativity, Chef Javier blends traditional Mediterranean flavours with influences from the Basque Country, resulting in dishes that strike a balance between familiarity and innovation.
In celebration of the annual hunt for “white gold,” the elusive truffles of Alba, Rustico presents five dishes that highlight the delicate and earthy flavours of this seasonal delicacy. The Poached Japanese Egg and Spanish Potato Textures features a sous- vide poached egg with a sensuous fragrance, complemented by the creamy richness of the truffle.
Among Rustico's standout dishes is the Homemade Tagliatelle, which combines luscious mushroom jus, butter, and parmesan cheese with the intoxicating aroma and earthy piquancy of white truffle. The Burrata and Mix Leaves Salad with Walnuts Vinaigrette Dressing offers a refreshing combination of flavours, while the Beef Carpaccio with Manchego Cheese, Arugula, Black Olive, and Pine Nut Dressing showcases a harmonious blend of textures.
For those with a sweet tooth, Rustico presents the "Rustico" Tiramisu Foam, a tantalising dessert topped with fresh truffle shavings. Additionally, the autumn delicacy can adorn any dish on the a la carte menu for an additional price.
